Healthy Greek Pasta Salad

Pasta salad is one of my favorite dishes to make. Not only is it so simple to throw together, but it always turns out great and is loved by everyone. Healthy Greek Pasta Salad is the perfect dish to bring to a family bbq or small get together.
This salad is made with fresh and organic ingredients, is gluten-free and can be made vegan with the substitution of vegan feta or just omitting it all together. I have a delicious homemade salad dressing that I love to add on top of this salad.

- Chickpea Pasta
- Cucumbers
- Grape Tomatoes
- Olives
- Onion
- Feta Cheese
- Banana Peppers
How to make Pasta Salad
This dish really can’t be any easier to throw together. The most time consuming part is boiling the water to prepare the pasta. From start to finish, you will be enjoying this meal within 30 minutes.
To start, you will of course need to boil water to cook the pasta. For gluten-free pasta salad, I like to use Banza Pasta. However, this is totally optional and versatile. You can use your favorite pasta for this dish.
While the pasta is boiling, prep your veggies by chopping the cucumber, onion and tomatoes.
Once your pasta has finished cooking, drain and rinse with cold water. Then, transfer pasta to a bowl. Add in the chopped tomatoes, onion, and cucumbers. Then, add in olives. I like to use pre-sliced olives, but you can also use whole if you’d like. Then add in the banana pepper and season with salt and pepper.
Add in the feta cheese last. I only like to sprinkle the cheese on top of what will be served and enjoyed immediately. This way the cheese will not go back with the remaining of the pasta (if you are saving it). This same idea goes for the dressing. I will only dress what will be eaten to ensure the pasta does not go soggy while saving in the fridge.
