I am no one to shy away from sweeter breakfast ideas, but trust me when I tell you this sugar cookie oatmeal is actually filled with healthy ingredients that will keep you both fueled and satisfied.

This recipe was adapted from my viral cookie dough baked oats that I shared on my pinterest, tiktok, and instagram. Equally important, it has primarily the same ingredients but a few additions to give it that sugar cookie taste rather than cookie dough. I can’t wait for you to try it!

what is baked oatmeal?

Instead of cooking oats in hot water or milk on the stovetop like traditional oatmeal, we’re instead adding in a few extra special ingredients, blending it and then baking it in the oven. The end result is like a delicious fluffy cake, but for breakfast! Trust me, you’re going to love it.

Baked oatmeal is perfect for meal prep too! You can make it ahead of time and place in the fridge, just pop it in the microwave to warm it up and you have a healthy breakfast throughout the week!

Ingredients

  • 1 cup old fashioned oats
  • 1/2 tsp baking powder
  • pinch of sea salt
  • 1 over-ripe banana
  • 2 tbsp granola butter, or any other nut/seed butter
  • 1 cup almond milk
  • 2 Tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp almond extract
  • sprinkles
  • yogurt (for topping)

Directions

  1. Preheat oven to 350F
  2. In a blender, combine all ingredients with the exception of the sprinkles and yogurt, and blend until smooth and creamy.
  3. pour into an oven safe dish, and bake for 25-30 minutes.
  4. remove from the oven and top with yogurt for the frosting, extra sprinkles and enjoy!
