Homemade Pop-Tarts Vegan Oat Flour

I don’t think I am alone when I say pop-tarts were a childhood fan favorite. I loved all of the different flavors, but I do have to say my absolute favorite was the original strawberry pop-tart. I loved how crispy, gooey and sweet they were. Not to forget to mention they were quick to make too, simply pop in the toaster and off you go.
The only thing that I don’t love about the original pop-tart is all the ingredients inside of it. As a kid, who cares, right? But now that i’m older i’m very conscious about what I put into my body. Now don’t get me wrong, I will still enjoy the real thing from time to time with no sweat. But it’s always fun to re-create your childhood favorites and make them with better-for-you ingredients.
That’s what you’ll find in this recipe, very simple ingredients that you won’t even believe it. I use oat flour that you can simply make yourself by blending oats, vegan yogurt, and almond milk. Ingredients in homemade vegan oat-flour pop-tarts
As I mentioned previously, this recipe calls for very simple ingredients- no funky stuff here! I use oat flour, vegan yogurt, maple syrup and almond milk. Grab these ingredients below and let’s get baking!
- oat flour
- vegan or regular yogurt
- maple syrup
- salt
- baking powder
- almond milk
- vanilla extract
- sprinkles
- your favorite jam or jelly
How to make vegan pop-tarts
From start to finish, you’ll be enjoying a freshly baked homemade pop-tart in just about 30 minutes.
To start, preheat the oven to 350F and prepare a baking sheet by lining it with parchment paper or a silicon baking mat (my preference).
Then, in a large mixing bowl combine oat flour, salt, and baking powder. If you don’t have oat flour, you can simply make your own by blending oats for 10-15 seconds or until you have a really fine oat flour.
Next, add in yogurt and maple syrup and mix until a dough starts to form. You may need to use your hands, don’t be afraid to get messy with it.
Flour your hands and a clean working surface with more oat flour and bring the dough out of the bowl. Start to knead the dough with your hands until all the ingredients are well combined. Then, using a rolling pin, roll out the dough into a large rectangle.
Using a knife cut diagonal and horizontal lines forming 6 equal sized rectangles (these are the tops and bottoms of your pop-tarts). I was able to create three full sized pop-tarts with this recipe.
Place the rectangles on the baking sheet and fill the center of three rectangles with your favorite jam or jelly. I used about 1-2 tsp of guava-fig jam, but feel free to use whichever flavor you prefer!
Next, place the remainder three rectangles on top, then using a fork, crimp the edges together until they are secure. Don’t worry if some jam spills out, you can cover that with icing!
Brush the tops with almond milk and bake in the oven for 15-20 minutes or until tops are firm to the touch. Let cool slightly before icing.
To make the icing, simple combine powdered sugar, vanilla and almond milk. Pour over tops of cooled pop-tarts and sprinkle immediately with sprinkles.
