How To Make

ONE: Start by making the chicken on the stovetop, this will take about 15 minutes. Then, cut sourdough bread into cubes and add to a bowl, drizzle with olive oil and air fry. Set aside while you make the miso dressing.

TWO: Next, add kale to a bowl and drizzle with extra virgin olive oil. Use your hands and massage the kale until it’s soft and tender, this takes about 3 minutes.

THREE: Next, add on the jalapeno pistachios, golden raisins, chicken and sliced red apples. Drizzle with miso dressing, toss well and serve immediately.

Ingredients

Chicken Breasts

  • 2 chicken breasts
  • 1 tbsp coconut oil, or any other oil.
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tbsp butter, cut into 1 tsp cubes

Miso Dressing

  • 1/2 cup avocado oil, may sub extra virgin olive oil
  • 1/2 tbsp honey
  • 1 tbsp lemon juice
  • 2 tsp dijon mustard
  • 1 tbsp miso paste
  • 1 tsp red wine vinegar
  • 1 tsp coconut aminos, may sub soy sauce
  • 1/2 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp nutritional yeast

Kale Salad

  • 1 head of kale, chopped about 4 cups
  • 1/3 cup jalapeno pistachios
  • 1/4 cup golden raisins
  • 1 honey crisp apple, sliced thin

Sourdough Croutons

  • 2 slices of sourdough bread, cut into cubes
  • 1 tbsp extra virgin olive oil

Directions

  1. Start by making the chicken breasts. Heat 1 tbsp coconut oil over medium to high heat.
  2. Pat chicken breasts dry with a paper towel and then season both sides with freshly cracked salt and pepper. In a small bowl, mix garlic powder, onion powder, Italian seasoning and paprika together and then divide evenly and season both sides of the chicken breasts.
  3. Add breasts to skillet and allow to cook for 5-7 minutes, set a timer. Flip, add in the cubed butter and cook for the same amount of time, or until the internal temperature reaches 165F. Remove chicken from the skillet and allow to rest before slicing.
  4. Next make the croutons. Start by slicing the sourdough bread into small cubes. Add them to a bowl and drizzle with oil, toss well and air fry at 400F for 5-7 minutes or until golden brown and crunchy.
  5. In the meantime, make the Miso dressing by whisking all ingredients together in a bowl.
  6. Add kale to a bowl and drizzle with extra virgin olive oil. Use your hands and massage the kale until it's soft and tender, this takes about 3 minutes.
  7. Next, add on the jalapeno pistachios, golden raisins, chicken and sliced red apples. Drizzle with miso dressing, toss well and serve immediately.
