Lemon Poppy Seed Mug Cake

I have been on a mug cake kick lately. I typically am not a huge fan, but I think I’ve perfected the recipe where the mug cake comes out fluffy, dense and full of flavor each time. This lemon poppy seed mug cake is no different. This recipe was adapted from my Strawberry Shortcake Mug Cake. If you love strawberry shortcake, I encourage you to give my recipe a try, it’s one of my favorites!
Since the strawberry shortcake recipe was such a hit, I thought, “why not create a lemon poppyseed recipe that is similar to that”. I love the way this recipe turned out, it’s incredibly fluffy, light and is made with all vegan ingredients!

Ingredients in Lemon Poppyseed Mug Cake
This lemon poppyseed mug cake is quick to make! You will only need a few simple ingredients, a microwave safe dish, and a fork or whisk.
- flour
- vegan cane sugar
- almond milk
- poppy seeds
- vanilla
- baking powder
- salt
- lemon juice
To ensure this recipe is 100% vegan it’s important to use a sugar that is certified vegan. You can also use a sugar substitute such as stevia, purecane etc! My favorite vegan sugar is from Wholesome Sweeteners. It’s certified vegan and organic so it’s a brand that I trust through and through!

How to make lemon poppy seed mug cake
From start to finish, this recipe will be ready in just about 5 quick minutes! Trust me, you’ll be so surprised at how gourmet this dessert is and that it was made in the microwave!
To start, combine all the ingredients together in a bowl. Start with the dry ingredients, then mix in the almond milk, vanilla extract and lemon juice. Whisk with a fork until a thick batter is formed.
Generously grease a microwave safe dish with non-stick spray, then pour in the batter. Place in the center of the microwave and cook for 1 minute and 30 seconds. Carefully remove the dish from the oven. Be careful, because the dish will be hot!
Using pot holders, place the dish upside down and give it a little shake until the mug cake falls out. Then, top with desired toppings. I like to use fresh strawberries, lemon icing, and fresh lemon zest.
