Ingredients And Substitutions

These are the main ingredients and substitutions for Lemon Truffles. Scroll down to the recipe card for a full list of ingredients and instructions.

What makes these truffles so creamy is the all natural almond butter! I love getting mine from Trader Joe’s, but you can use any cream almond butter that you prefer. Alternatively, you can swap for cashew butter, or for a nut free option, sunflower seed butter or oat butter.

Pure Maple syrup is one of my favorite sweeteners to use in my recipes. It’s all natural and refined sugar free, plus I just love the taste. You can however sub for honey, agave or date syrup.

Lemon extract adds a delicious lemon flavor that is even more over-powering than the lemon juice. I prefer to use both to really bring out all the flavors.

Vanilla extract is a bonus ingredient more added flavor. If you do not have it on hand, you can simply leave it out.

Almond flour gives this recipe a slightly nutty taste which I love. You can sub for oat flour as well!

In the end, these truffles are coated with melted white chocolate. To make these vegan, opt for a vegan white chocolate. I love the brand Pascha which can be found online.

How To Make

ONE: In a bowl, combine almond butter, maple syrup, vanilla extract, lemon extract, and lemon juice. Mix well.

TWO: Then, mix in almond flour until a dough is formed. Use a cookie scoop, roll mixture into balls and place on a baking sheet that is lined with parchment paper. Freeze while you melt the white chocolate.

THREE: Dip each truffle in white chocolate and place back on the baking sheet. Freeze once more before drizzling with more white chocolate and finishing it off with lemon zest. Freeze once again until firm and enjoy!

Tips And Tricks

Mix wet ingredients together fully before adding in dry ingredients.

Use both fresh lemon juice and lemon extract to really bring out the tangy flavors.

If your truffle mixture is too wet, add in a touch more almond flour. 

Drizzle each truffle with more white chocolate and finish them off with fresh lemon zest.

How To Serve And Store

Serve these Lemon Truffles once they are firm enough to handle.

Store them in an airtight container in the fridge and enjoy within 7 days. Truffles can also be stored in the freezer and enjoyed within 30-60 days. Thaw on the counter for 5-10 minutes before enjoying.

Ingredients

Lemon Truffles

  • 1/4 cup pure maple syrup
  • 1/4 cup creamy all natural almond or cashew butter
  • ½ tsp vanilla extract
  • 1/2 tsp lemon extract
  • 3 tbsp freshly squeezed lemon juice
  • 1 + 1/3 cup almond flour

White Chocolate Magic Shell

  • 3/4 cup white chocolate chips
  • 1 tbsp coconut oil, for melting chocolate

10-12 truffles

Directions

  1. In a bowl, combine almond butter, maple syrup, vanilla extract, lemon extract, and lemon juice. Mix well.
  2. Then, add in almond flour and mix until a dough is formed.
  3. Use a cookie scoop, roll mixture into balls and place on a baking sheet that is lined with parchment paper. Freeze while you melt the white chocolate.
  4. Add white chocolate chips to a microwave safe dish with the coconut oil and melt in 30 second increments, stirring well in between each round.
  5. Dip each truffle in white chocolate and place back on the baking sheet. Freeze for 3 minutes and then drizzle each one with more white chocolate before finishing it off with lemon zest.
  6. Place back in the freezer for 10-15 minutes or until totally firm and enjoy!

I couldn’t find any white chocolate at Trader Joe’s so I instead coded them in strawberry Greek yogurt and they are amazing! Now I can eat them for breakfast !!

Made these yesterday. They are phenomenal, especially after being in the freezer overnight. Yum!
