Ingredients And Substitutions

For this recipe I used plain greek yogurt which is naturally high in protein, however, you can use any type of yogurt that your prefer such a pumpkin flavored yogurt, vanilla, or non-dairy yogurt for a vegan option.
Pumpkin puree is naturally high in Vitamin C and adds a lovely fall twist to these bites.
A touch of vanilla bean paste adds a ton of flavor, however you can also use vanilla extract.
Maple syrup is an unrefined sugar that I love to use in my recipes, however, you can also use honey, agave or date syrup.
Use any type of chocolate that you’d like such as dark chocolate, milk chocolate, or even white chocolate.

How To Make
ONE: In a bowl, mix together the yogurt, pumpkin, maple syrup and vanilla. Use a cookie scoop or a spoon and add dollops of the yogurt to a baking sheet that is lined with parchment paper and freeze.


TWO: When ready, in a medium bowl melt the chocolate, I like to add in a touch of coconut oil which helps the chocolate melt and have a creamy and smooth texture.
THREE: Working quickly, dip each frozen yogurt bite in the melted chocolate and coat fully. Place back on the parchment paper and back into the freezer.

FOUR: Once totally frozen, store in the fridge and enjoy!

Tips And Tricks
Yogurt bites must be fully frozen before dipping in the melted chocolate.
Work in small batches when dipping the yogurt in the chocolate so that it doesn’t melt.
Be sure to fully coat the yogurt bites in chocolate to create that outer shell, otherwise the yogurt will seep out once placed in the fridge.
How To Serve And Store
Serve these Magic Shell Yogurt Bites one the outer shell has fully hardened and enjoy straight out of the fridge. You can also freeze these, however the inside will instead be hard and tough to enjoy.
Store in the fridge and enjoy within 4-5 days. Or in the freezer and enjoy up to 30 days.

Taste And Texture
Magic Shell Yogurt Bites are sweet with a creamy gooey center. The pumpkin yogurt has a great flavor that isn’t over powering that pairs great with the dark chocolate.
The texture is crunchy on the outside but smooth and creamy in the center.

Question, Ingredients include almond butter but they aren’t referenced in the notes or recipe. I’m assuming they are added with pumpkin/yogurt mixture?
