The filling of this cheesecake mixture is made with a blend of cottage cheese and plain greek yogurt.

It’s sweetened with maple syrup, but can easily be swapped for honey, agave, coconut or cane sugar.

Vanilla extract is always a great addition to any sweet recipe.

I used plain graham crackers for the crust, but you can also use gluten free if needed.

The strawberry topping is made with frozen strawberries but you can also use fresh if desired.

It’s sweetened with coconut sugar and has a touch of lemon juice for balance.

How To Make

ONE: Start by making the strawberry filling so it has time to cool before adding to the jars. In a saucepan, add in the frozen strawberries, coconut sugar and lemon juice. Heat on medium to low heat stirring occasionally. Once strawberries are soft, use a potato masher to smoosh them down then, remove from heat to let cool.

TWO: Next, in a food processor add in the cottage cheese, greek yogurt, maple syrup and vanilla extract. Blend until smooth and creamy.

THREE: Crush graham crackers on the side, I used my blender for this but you can also use a bag and rolling pin.

FOUR: Assemble the jars, add in the graham cracker dust first, followed by the cheesecake filling and then the strawberries.

Make the strawberry mixture first so that it has time to cool before adding to the jars.

Use a food processor or high speed blender to really combine all the ingredients for the cheesecake filling.

I like to use my blender to make the graham cracker dust, but you can also use a bag and a rolling pin.

Cream cheese would be the best alternative.

No, you don’t! But the sugar is what creates that gooey texture so I recommend it.

Ingredients

Cheesecake filling

  • 1 cup cottage cheese

  • 1 tbsp lemon juice

Graham Cracker Dust

  • 3/4 cup crush graham crackers
