No Bake Cookie Dough Brownies

Cookie dough brownie dessert bars are the perfect Summer treat! They are jam packed with protein and don’t have any added sugar, but you’d never believe it because they are sweetened with dates!

YES! You read that right: these No Bake Cookie Dough Brownies are entirely no-bake! The oven isn’t turned on ONCE. The fudgy date brownie base, the gooey sugar free cookie dough center and the rich chocolate and peanut butter topping is all prepped and prepared with a food processor, microwave and your fridge + freezer!

This is both challenging and fun! I love to see what ways I can make a classic flour recipe, flourless!

No bake cookie dough brownie bars are one of my favorite desserts to make. For one, anything no bake is a win in my book. Especially during the Summer when the last thing you want to do is turn on your oven! Secondly, they’re so easy to make. It still blows my mind that they’re super fudgy and rich but entirely no-bake and have NO ADDED SUGAR.

These No Bake Cookie Dough Brownie Bars are SO EASY to make. You will need a few kitchen gadgets, supplies and ingredients and you’ll be on your way!

Let’s talk layers

Okay, let’s talk about these three layers of chocolatey goodness.

Layer one- Brownie fudge. This layer is composed of dates, almonds, flax seed meal, chocolate protein and peanut butter. Dates are natures candy in my book. They are so sweet and make for the perfect ingredient to add to desserts instead of processed sugar!

Layer two- Chickpea cookie dough. If you’ve been around for awhile, you know that chickpea cookie dough is one of my favorite desserts. It’s simple, light and nutritious and you would never guess that it is made from beans! This layer is made up of chickpeas, dates, peanut butter, vanilla and of course, chocolate chips.

Layer three- Peanut Butter chocolate ganache– Now this layer might be my favorite combo. Chocolate and peanut butter is a match made in heaven and this recipe is no different. Simply melt dark chocolate (or your favorite chocolate) with peanut butter and you will get the most delicious topping for any dessert!

Kitchen tools needed to make cookie dough brownie bars

You will need a few tools for make these bars from scratch. I used my food processor, but if you have a blender, you can use that as well!

  • Food processor OR Blender
  • Loaf pan
  • Parchment paper
  • Rubber spatula

Substitutions

If you have a nut allergy, you can simply change the peanut butter for any seed butter and it will work just the same.

Instead of using chocolate protein- use cacao powder instead!

Ingredients

Brownie Layer
  • 10 pitted dates
  • 1/3 cup raw almonds
  • 1/4 cup flax seed meal
  • 1 tsp vanilla
  • 1/4 cup chocolate protein
  • 1/4 cup peanut butter
  • 2 Tbsp almond milk
Cookie Dough Layer
  • 1 15oz can of chickpeas, drained and rinsed
  • 1/4 cup peanut butter
  • 6 pitted dates
  • 1/2 tsp vanilla
  • 1/2 cup dark chocolate
Chocolate Peanut Butter Layer
  • 1 cup dark chocolate, melted
  • 1/3 cup peanut butter, melted.

Directions

  1. Prepare loaf pan or an 8×8 pan with parchment paper. Loaf pan will allow for a thicker bar, 8×8 pan will allow or a thinner bar.
Brownie Layer
  1. In your food processor, combined pitted dates, raw almonds, flax seed meal, and vanilla and process until smooth. About 2 minutes.
  2. Then, add in chocolate protein, peanut butter, and almond milk and process until a thick dough starts to form.
  3. Press this dough into the loaf pan in a even layer.
Cookie Dough Layer
  1. Drain + rinse chickpeas, then add them to your food processor with the peanut butter, dates and vanilla and process until smooth.
  2. Fold in chocolate chips last. Press this dough into the loaf pan on top of the brownie layer. Set aside.
Chocolate Peanut Butter Layer
  1. Melt 1 cup of dark chocolate and 1/2 cup of peanut butter together either in the microwave at 30 second intervals or in a double broiler on the stove-top.
  2. Pour this mixture over the cookie dough layer and set in the freezer to harden for up to one hour.
  3. Cut into square and store in the fridge. Enjoy!
