Maple Syrup: Adds natural sweetness to both the filling and cookie dough bites. You can swap in honey or agave—whatever you’ve got.

Vanilla Bean Paste: Super flavorful and fancy-feeling, but vanilla extract gets the job done just fine.

Almond Butter & Almond Flour: These bring that cookie dough magic. Almond butter is my favorite but any nut or seed butter works. You can even almond matcha butter for a fun twist.

Mini Chocolate Chips: Because it’s not cookie dough without chocolate. Use regular, chopped, or dairy-free—no rules here.

Vanilla Granola (blended): Acts as the “crust.” Crushed graham crackers, cookies, or even oats are great backups.

Heavy Whipping Cream: Whipped for that soft, fluffy finish. Add a little powdered sugar if you want it sweet, or use coconut cream for a dairy-free twist.

Let’s Build These Cookie Dough Cheesecake Jars

Blend the Granola: Add your vanilla granola to a blender or food processor and blend until it turns into a fine powder. This will be your “crust.” Set it aside.

Make the Filling: Add cottage cheese, Greek yogurt, maple syrup, and vanilla to a food processor or blender. Blend for about 12–15 seconds—just until smooth. Don’t over-blend or the texture can turn runny. Transfer to the fridge while you prep the rest.

Ingredients  

Crust:

  • 1 cup vanilla granola (blended into a powder filing)

Cheesecake Filling

  • 1.5 cups cottage cheese (I like good culture low fat 2%)
  • 1/2 cup plain greek yogurt
  • 1/4 cup maple syrup
  • 1 tbsp vanilla bean paste (or 1 tsp vanilla extract)

Cookie dough bites

  • 2 tbsp pure maple syrup
  • 2 tbsp creamy all natural almond butter
  • 1/2 tsp vanilla bean paste or vanilla extract
  • 1/2 cup almond flour
  • 2 tbsp mini dark chocolate chips

Topping

  • 1/2 cup heaving whipping cream
  • 1 tsp vanilla bean paste
  • 1-2 tsp powdered sugar (optional )

Instructions

  • Blend the granola in a blender until you have a powder and set aside.
  • add all the filling ingredients and processor for 15 seconds, over processing can result in a runny cheesecake filling.
  • Set in the fridge.
  • Combine cookie dough in a bowl and roll into bite sized balls.
  • Mix the cookie dough bites with the cheesecake filling, layer in jars starting with granola, cheesecake filling and homemade whipped cream.

Notes

 

  • Don’t over-blend the filling: Blend just until smooth—about 12–15 seconds is plenty. Over-blending can lead to a runny texture, so keep it quick!
  • Prep-friendly: These jars are perfect for making ahead. Store in airtight containers and wait to add the whipped topping until right before serving.
