No Bake Sugar Cookie Protein Bites

The perfect protein filled snack
No Bake Sugar Cookie Bites are the perfect snack to enjoy when you need something quick to fuel up on. They’re made with only 7 simple ingredients and taste just like a sugar cookie.
One of my favorite things about these no bake bites is that they are jam packed with protein, and are both vegan and gluten-free! I can’t wait for you to try these!

Ingredients in no bake sugar cookie bites
If you haven’t made energy bites yet, then it’s about time you do! They truly are the perfect on the go snack or late night bite to keep in your fridge when you want something quick and healthy. A major plus is that they don’t take a ton of ingredients to make them either.
cashew butter- I have made these bites with almond butter as well, however any type of nut or seed butter can work here.
maple syrup- maple syrup is an all natural unrefined sugar which is why you’ll find it in most of my recipes, this is what binds all the ingredient together. you may also sub honey, agave, or date syrup here.
almond extract- almond extract is what is going to give these energy bites that sugar cookie taste- you don’t want to skip it.
almond flour- to keep these bites grain and gluten-free, we will use almond flour. I have not tested this recipe with any other flours, however, my guess would be that you can sub oat flour.
vanilla protein powder- vanilla protein powder will work best here, I used the vegan vanilla powder from Love Sweat Fitness which I love, it’s not chalky at all.
salt- just a dash of salt to balance out the sweetness of the maple syrup and to give these a slight, sweet salty flavor.
sprinkles- I prefer to use non-toxic sprinkles such as watkins, but feel free to use your favorite here!

How to make sugar cookie protein bites
These energy bites are easy to make and also happen to be vegan and gluten free! All you’ll need is a few ingredients, a large bowl, a cookie scoop, and some parchment paper!
- combine the cashew butter, maple syrup, and almond extract together.
- add in the almond flour, protein powder, and salt last and mix until a thick dough is formed
- fold in the sprinkles last and roll the mixture into balls
- place them on a plate with a piece of parchment paper and then in the freezer to harden
- remove and enjoy!
How to store & freeze energy bites
Keep these sugar cookie protein bites in an airtight container.
- Enjoy up to 1 week in the fridge
- 2 months in the freezer
If you’re eating them straight from the freezer, I’d recommend letting them soften up a bit in the fridge or at room temp before doing so.

Made these with honey, almond butter and chocolate chips! Tasted great but I think the almond and sprinkles combo would have been even better! Using this as a starting point for new versions. ?

I just made these using what I had on hand, and they were delicious! I substituted peanut butter for cashew, and I didn’t have almond extract so I used maple (which I assumed was meant to be 1/2 tsp), and yum yum so good!!!! I did festive Christmas sprinkles and these will be perfect for girls night tonight 🙂
