This salad recipe was highly requested by a few of my followers over on my Instagram and for good reason too. I personally love a big bowl full of crunchy greens, veggies and lean protein. It’s nourishing, healthy, filling and so satisfying. This is the perfect recipe to enjoy as we transition into the new year.

Panera Bread Green Goddess Salad with Chicken is the perfect salad to prep for the week too. There are a handful of ingredients that go into it, but all you have to do is assemble your salad bowl when ready to enjoy and keep the ingredients prepped separately in the refrigerator all week long.

Green Goddess Salad Ingredients

Panera Bread Green Goddess Salad with Chicken recipe is packing all of the goods with fresh tangy flavors that make eating this salad enjoyable and filling! Here’s what you’ll need:

For the salad: we are using grilled chicken breast, spring salad mix, cherry tomatoes, hard boiled eggs, bacon, or turkey bacon for a healthier option, avocado and pickled onions. If you want to make this vegetarian, feel free to skip the chicken and use a can of chickpeas instead.

For the salad dressing: we are using greek yogurt for the base and blending it with a wide arrange of herbs like: parsley, basil, shallot, cilantro, chives, fresh dill, lemon, garlic, dijon mustard and white vinegar. If you want to make this dairy free, feel free to use a vegan/ non-dairy yogurt for the base.

How to make the green goddess salad dressing

The delicious, creamy, and tangy green goddess salad dressing is the star of the show here. It’s undeniably easy to make and you’ll want to drizzle it on everything. To make it simply:

  1. Add the greek yogurt, basil, shallot, cilantro, chives, dill, lemon juice, garlic, dijon mustard, red wine vinegar and salt and pepper to a blender and blend until smooth and creamy.
  2. Taste it and add more salt and pepper to taste.

Make it ahead of time

If you want to meal prep this green goddess salad or serve it at your next gathering, then I’d suggest prepping all the ingredients the night before and storing them separately, then assembling the salad when you are ready to enjoy. This ensures that everything stays fresh and crisp when ready to serve.

Ingredients

Pickled Onions
  • 1 cup red onion, thinly sliced
  • 3/4 cup white vinegar
  • 1 Tbsp sugar
  • 1 1/2 tsp salt
  • 1 cup warm water
Salad Assembly
  • salad spring mix
  • 6 oz grilled chicken breast
  • 1 slice of bacon or turkey bacon, chopped
  • 1/2 avocado, diced
  • 1/3 cup cherry tomatoes, halved
  • 1 hard boiled egg, cut in half
  • 3 tbsp pickled onions
Green Goddess Salad Dressing
  • 1 cup of fresh basil
  • 2 tbsp shallot
  • 1/4 cup cilantro
  • 1/2 cup chives
  • 1 tbsp fresh dill
  • 1/4 cup fresh lemon juice
  • 2 cloves of garlic
  • 1 tbsp dijon mustard
  • 1.5 cups plain greek yogurt
  • 1/4 cup red wine vinegar
  • salt and pepper to taste

Directions

Pickled Onions
  1. Thinly slice red onion, use a mandoline if possible, or thinly slice into 1/8 inch slices and place in a large, deep glass bowl. In a separate, medium bowl, combine white vinegar, sugar, salt, and warm water. Pour mixture over red onions and cover with a tight lid. Store in the refrigerator or a minimum of 1 hour.
Green Goddess Salad Dressing
  1. Place all of the ingredients into a blender and blend until smooth and creamy, about 30-45 seconds. Store in the refrigerator in an air tight lid and enjoy within 5-7 days.
Salad Assembly
  1. Place the spring salad mix in a large bowl and top with grilled chicken that’s been sliced. Next, add in the chopped bacon, diced avocado, halved cherry tomatoes, halved hard boiled egg, and pickled onions. Drizzle over as much green goddess salad dressing a desired and enjoy!

How close to the real thing does the dressing taste? My kids LOVE Panera’s Green Goddess dressing and will actually drink it out of the cup (yuck!). I tried making a copycat recipe before but it wasn’t even close.

Hi Carrie! It’s not exactly the same, but pretty close. This is my own personal spin on it. Panera actually has their recipe online so if you wanted to copy it exactly how they do I would recommend checking out their website.
