Use mixed greens for variety, or you can also just use spinach or arugula.

Yellow peaches work best in this recipe, but you can use any type of peach or nectarine.

Red onion give this recipe a nice crunch and subtly spicy flavor.

Goat cheese is creamy, soft and tangy. It has a mild and even lightly sweet taste.

Ingredients

Peaches + goat cheese salad

  • 4 cups mixed greens 
  • 2 peaches, sliced 
  • 1 Avocado, sliced  
  • 1/2 Red onion, sliced 
  • 1/3 cup Goat cheese, pulled apart 
  • 1/2 cup diced walnuts
  • Balsamic glaze (for drizzling)

Dressing 

  • 3 tbsp red wine vinegar
  • 3 tbsp EVOO
  • 1 tbsp honey 
  • 2 garlic cloves, minced 
  • 1 tsp dijon mustard
  • Salt and pepper to taste
