Pecan Pie Bars

Pecan Pie Bars are made with brown sugar, maple syrup and plant-based butter. These bars are the perfect blend of that classic sweet and buttery flavor and taste just like pecan pie, without any of the hassle.

These tender and delicious pecan pie bars have an effortless press-in crust and a custard-like filling. They are made with melted Country Crock® Plant Butter, coconut sugar, almond flour, vanilla + almond extract, and salt. The filling comes together with more Country Crock® Plant Butter, chopped pecans and pure maple syrup. This recipe is as simple as pressing the crust into the dish, then pouring the filling over and baking.

Country Crock® Plant Butter butter is the BEST Vegan Butter

Country Crock® Plant Butter butter cooks, bakes and tastes just like traditional butter. My favorite part is that you can remove it from the fridge, and it’s spreadable immediately. Unlike tradition butter, theres no waiting around for it to thaw.

Now, I will admit. I was a little hesitate for Country Crock® Plant Butter. Usually anything that is plant-based or vegan is similar to the original product, but it’s always missing something to make it have that perfect taste. I didn’t think it would taste the same or even bake the same, but boy was I wrong. Country Crock® Plant Butter is a new dairy-free, plant-based butter that tastes JUST LIKE DAIRY BUTTER.

The secret is that it’s made with plant-based oils such as avocado, olive, or almond oil. It still has that creamy buttery texture and yes, taste!

Go ahead and swap out butter in any recipe for Country Crock® Plant Butter butter without any hassle. You can use plant-based butter as a 1:1 ration for any recipe!

HOW TO MAKE PECAN PIE BARS

This recipe comes together with just two simple steps:

  • Buttery and soft pie crust
  • Carmel and buttery pecan filling

Let’s start with the crust

The crust for this pecan pie recipe couldn’t be any easier. I like to used almond flour and give it a ton of flavor with spices and butter. It’s as simple as adding the ingredients to a bowl, and mixing until a dough starts to form. Then, simply press into an 8×8 pan and bake!

PECAN PIE FILLING

The Pecan Pie Filling is also very easy to make. All that you need to do is add all ingredients for the filling into a saucepan, then pour on top of the crust.

Ingredients:
  • Country Crock® Plant Butter
  • Coconut Sugar
  • Maple Syrup
  • Almond and Vanilla extract
  • Pecans

To start, add Country Crock® Plant Butter to a saucepan and heat over medium-low heat. Then, add in sugar, maple syrup and extracts. Watch the mixture closely, and as soon as it starts to boil add in pecans and turn off heat.

Removing from the heat once it reaches boiling point is important so that the sugar does not burn.

Then, pour the mixture over the prepared crust and return to the oven.

Worth the wait

Once the pecan bars are baked, you will need to remove them from the oven and allow them to cool down completely before allowing them to sit in the fridge. The fridge will allow the crust to firm up and for these bars to be able to be cut into bite sized pieces!

Ingredients

Crust
  • 2 cups almond flour
  • 2 Tbsp tapioca flour
  • 3 Tbsp ground flax
  • 1/2 cup Country Crock® Plant Butter, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
Pecan filling
  • 2 cups of pecans, chopped
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup Country Crock® Plant Butter
  • 1/2 tsp almond extract
  • 1/4 tsp salt

Directions

  1. Preheat oven to 350F and prepare an 8×8 baking dish my both lining and coating with non-stick spray.
  2. In a large mixing bowl, combine all crust ingredients and mix with a spatula until a dough starts to form.
  3. Evenly press dough into pan. Bake for 20 minutes.
  4. Remove from oven and allow to cool for 15-20 minutes.
  5. Then, in a medium saucepan, melt Country Crock® Plant Butter and add in coconut sugar and maple syrup. Then, add in extracts and bring mixture to a boil. Stirring occasionally.
  6. As soon as the mixture reaches a boil, remove from heat and stir in chopped pecans.
  7. Then, pour mixture over crust and return to the oven for 25 minutes.
  8. Remove from oven and allow to cool completely before placing in the fridge for a minimum of 2-3 hours.
  9. Cut into squares and enjoy!
