Pistachio Overnight Oats (Meal Prep)
Pistachio overnight oats are creamy, nutty, and the perfect make-ahead breakfast. With rolled oats, pistachio milk, Greek yogurt, and crunchy pistachios, this recipe is simple to prep and loaded with flavor.

If you have been here a while, you know I love overnight oats in all forms, but this pistachio version feels a little extra special. The pistachio milk gives it that nutty flavor, the yogurt keeps it creamy, and the chopped pistachios on top add the best crunch.
It is one of those recipes that you can prep once and then enjoy for days, which is a total win for busy mornings. I love topping mine with a spoonful of pistachio cream, similar to my pistachio cottage cheesecake jars and fresh fruit to make it feel like a café-style breakfast right at home.
How to Make Pistachio Overnight Oats
Mix the base. In a large mixing bowl, combine oats, pistachio milk, Greek yogurt, maple syrup, chia seeds, vanilla, cinnamon, and salt. Stir well to combine.

Divide and chill. Spoon the mixture evenly into four jars or containers. Cover and refrigerate overnight or at least 4 hours.

Serve. In the morning, top with pistachio cream, extra chopped pistachios, and fresh fruit if desired.
Little Secrets for the oats
- Use the right oats: Rolled oats give the best creamy yet chewy texture. Quick oats can get too soft and steel cut oats will stay too firm.
- Chill long enough: Let the jars sit at least 4 hours, but overnight gives the best texture.
- Sweeten to taste: Start with less maple syrup if you prefer it mild and drizzle more on top in the morning if needed.

Flavor Variations for Pistachio Overnight Oats
One of the best things about overnight oats is how easy they are to customize, and this pistachio version is no different. Here are a few fun ways to switch it up:
Chocolate – Stir in a spoonful of cocoa powder or top with shaved dark chocolate for a nutty, brownie-like vibe.
Raspberry – Add a layer of raspberry jam before chilling or top with fresh raspberries for a sweet and tart combo.
Almond – Use half pistachio milk and half almond milk, then finish with sliced almonds for extra crunch.
Baklava Inspired – Drizzle honey on top and sprinkle with a pinch of cinnamon for a baklava style twist.

How to Serve and Store
Serve: These oats are best enjoyed chilled straight from the fridge. Top with pistachio cream, extra chopped pistachios, fresh fruit, or a sprinkle of granola to make them feel extra special.
Store: Keep the jars covered in the refrigerator for up to 4 days. The oats will continue to thicken as they sit. If you prefer a looser texture give them a stir before serving and add an extra splash of milk.

This recipe was delicious but it references a pistachio cream for the topping, and I have no idea where to find that or how to make it.
Hi Melissa! I apologize for the confusion, the pistachio cream is an amazon purchase (I just updated the recipe card with a link). I don’t have a recipe for it (yet!). so glad you enjoyed it!!xx
What I’ve never heard before and word to the wise, sometimes oats, when they are soaked overnight, take on a strange green apple flavour. It’s apparently because of the mild fermenting that happens as they become soft in yoghurt or milk. With this recipe, I might even recommend blending the oats. Flavour wise, delicious. Next time though I’d put layers of pistachio paste between the oats rather than just on top, as the intensity of flavour got lost after the first bites. Would also recommend eating them slightly heated up with some white chocolate chips. When I ate it like this, it went from a 5 to a 10. Will definitely make again with some tweaks.
