Use pre-made puff pastry sheets that are frozen, then thawed. Or if you have a favorite homemade version, feel free to use that.

The puff pastries are topped with peach or apricot preserves, but you can use any flavor that you’d like!

Brie cheese is added on top of that for a creamy and tart flavor. Alternatively you can use a cream cheese mixture if preferred.

Use fresh peach slices for best results.

An egg wash will give these tarts a lovely golden brown color and crispy texture.

Powder sugar dusted on top after baking adds the perfect amount of sweetness and gorgeous design.

Fresh thyme sprinkled on top adds a pop of color and some fresh herb flavor.

Drizzle honey to finish it all off.

How To Make

ONE: Thaw puff pastries according to package. Roll them out and cut into 4 equal parts for each sheet, so you’re left with 8 slices.

TWO: Place slices onto a baking sheet that’s lined with parchment paper. Then, use a sharpe knife to score the edges. Basically gently, but firmly run it across the edges, like shown in the photo below.

THREE: Next, add fruit preserves to the center and top with a slice of brie cheese. Then, add fresh peach slices on top of that.

FOUR: Brush an egg wash around the edges and bake!

FIVE: When done, remove from the oven and let cool slightly. When ready, drizzle with honey, dust with powdered sugar and sprinkle with fresh thyme and enjoy.

How To Serve And Store

Serve these Puff Pastry Peach Tartlets once they are cool enough to handle. Enjoy at room temperature, or slightly warmed up. Serve with honey, powdered sugar and fresh thyme. These can also be enjoyed with a scoop of vanilla ice cream.

Store in an airtight container in the fridge and enjoy within 5-7 days. Reheat in the air fryer, microwave or toaster oven.

Ingredients

  • 1 package of puff pastry (2 sheets)
  • 8 Tbsp peach preserves, or any other jam
  • 8 thick slices of brie cheese
  • 1 peach, sliced to create 16 slices 
  • 1 egg white + splash of water to make egg wash
  • fresh thyme, powdered sugar, honey for drizzle after baking.

8 Large Peach Tartlets

Directions

  1. Thaw puff pastries according to package.
  2. When ready, preheat oven to 350F and prepare a baking sheet by lining it with parchment paper.
  3. Then roll them out and cut them into 4 equal parts for each sheet, so you're left with 8 slices.
  4. Place slices onto a baking sheet that's lined with parchment paper.
  5. Then, use a sharpe knife to score the edges. Basically gently, but firmly run it across the edges, like shown in the photos above.
  6. Next, add 1 tbsp of fruit preserves to the center of each slice and top with a thick slice of brie cheese.
  7. Then, add fresh peach slices on top of that.
  8. Brush an egg wash around the edges and bake for 24-26 minutes.
  9. When done, remove from the oven and let cool slightly.
  10. When ready, drizzle with honey, dust with powdered sugar and sprinkle with fresh thyme and enjoy.
