Overnight oats are definitely one of my favorite meals to meal prep. I usually make a big batch of them at the start of the week and then keep them stored in the fridge to enjoy all week long. I personally think they get better with time too because they sit there and really soak up all the flavors and ingredients.
These pumpkin overnight oats are made with simple but healthy ingredients like old fashioned oats, pumpkin puree and oat milk. They’re loaded with healthy fats from the chia seeds and almond butter as well. This recipe is sure to be loved by all, especially if you’re a big pumpkin spice fan!

Ingredients in delicious pumpkin overnight oats
The ingredients in this pumpkin overnight oats recipe is simple: old fashioned oats, pumpkin, oat milk and some spices. I always say simplicity is key when creating recipes, this overnight oat recipe is no different.
coconut yogurt- I used a coconut based yogurt for this recipe to ensure it was vegan. However, feel free to use any type of yogurt that you’d like. You can leave this out, but I think you should try making it with it. The yogurt helps make these oats extremely creamy.
pumpkin puree– pumpkin puree from the can!
maple syrup– just a little bit of maple syrup to help sweeten these oats up. You can use any type of sweetener that you’d like, but I personally think the maple syrup tastes great with the pumpkin.
old fashioned oats– I used organic old fashioned oats which are best for overnight oats. I have not tested it with quick oats so I am unsure how the result would be.
pumpkin pie spice– a blend of ground cinnamon, nutmeg, ginger, and cloves which gives these oats that wonderful pumpkin spicy flavor
chia seeds– I personally love adding chia seeds to my oats for both the nutrients and the texture. Chia seeds are a great source of omega-3 fatty acids and when absorbed with liquid give a wonderful texture.

How to make vegan pumpkin overnight oats
Pumpkin overnight oats are a great breakfast to meal prep. I love making a big batch at the start of the week and having a healthy breakfast ready to go all throughout.
In a large bowl, combine coconut yogurt, pumpkin puree and maple syrup. Mix with a spatula until combined.
Next, add in old fashioned oats, oat milk, chia seeds and pumpkin pie spice. Mix once more until ingredients are really well incorporated.
Cover the bowl with a tight lid, foil or saran wrap and place in the fridge for a minimum of 5 hours or overnight. Then, mix well and top with your favorite toppings. I personally like to do dark chocolate chips, pecans and almond butter.
Overnight oats stay fresh for up to 7 days.
