ingredients in Football Peanut Butter Cups

You will only need about five ingredients to make these football peanut butter cups! I added protein powder for a boost of added protein, but feel free to use coconut flour instead if you prefer!

  • all natural runny peanut butter
  • maple syrup
  • protein powder or coconut flour
  • vegan dark and white chocolate
  • coconut oil, for melting the chocolate

How to melt chocolate

Every time I post a recipe that uses melted chocolate, I receive a few message asking how the heck do I get it so smooth and creamy? Don’t worry, I got you! Follow these simple steps and you will have the smoothest and creamiest melted chocolate.

If melting the chocolate in the microwave add chocolate chips to a microwave safe dish with a small amount of coconut oil and microwave in 30 second increments, stirring well in between each cycle. I have found that the minute and 15 second mark is the sweet spot.

If melting chocolate on the stovetop using the double broiler method. Heat some water in a saucepan over low heat and add a bowl to the top. However, make sure there is about 1-2 inches of space between the water and the bowl, otherwise the chocolate wont melt properly. The idea is to get the steam from the water to melt the chocolate. Add in some coconut oil and keep stirring until the chocolate is melted fully.

Directions

  1. Start by combining all natural runny peanut butter and maple syrup together in a medium bowl until well incorporated.
  2. Add in protein powder or coconut flour and mix until a thick dough is formed.
  3. Roll out the dough and using a spoon or a football shaped cookie cutter, cut out footballs and place on a baking sheet that's lined with parchment paper. Freeze for a minimum of 20 minutes or until firm to the touch.
  4. In the meantime, melt the dark chocolate with coconut oil in the microwave in 30 second increments until smooth and creamy.
  5. Coat each football in the melted dark chocolate using a fork and a spoon, scrape off any access chocolate, then return to the baking sheet. Place the dipped peanut butter cups back into the freezer to harden once more, about 10 minutes.
  6. In the meantime, melt the white chocolate with coconut oil. Then add to a plastic baggie or pipping bag. Cut off the corner and draw on the football thread by drawing a horizontal line, then 2-4 vertical lines. Place back into the freezer once more to harden completely and enjoy!

Notes

  • Reese's Football Peanut Butter Cups are best stored in an airtight container in the refrigerator or freezer and enjoyed within 30 days.
  • Since the chocolate is melted, it won't firm completely so they need to be stored in the fridge or freezer
