I love using almond butter for this recipe, but you can use any type of nut or seed butter. Make sure it’s natural and runny, thick nut butter like skippy will result in a different textured cookie.

Maple syrup gives this cookie a subtle but flavorful sweetness. You can also use agave, date syrup or honey, however, the texture may be slightly different.

Vanilla extract adds a lovely flavor.

I use a blend of Almond flour and gluten free 1:1 flour to keep this recipe gluten free. You can substitute oat flour in replace of both flours or one or the other. The texture may be slightly different.

Baking powder helps this cookie have a fluffy texture.

Salt helps balance out all the flavors.

The toppings are vegan chocolate chips, vegan mini marshmallows, and vegan graham crackers. To keep this recipe vegan and gluten free, be sure to use all vegan and gluten free toppings.

ONE: In a medium mixing bowl, combine maple syrup, almond butter and vanilla extract.

TWO: Next, add in almond flour, gluten free flour blend, baking powder and salt. Mix with a spatula until well combined.

THREE: Fold in the toppings and mix once more. Then, place the cookie on a piece of parchment paper and spread evenly until it’s round. Top with additional toppings and air fry for 10-12 minutes. Let cool for 5 minutes before eating and enjoy!

Tips and tricks

Use runny, all natural nut/seed butter. Using a thicker nut/seed butter, such as skippy, will result in a different textured cookie.

Add toppings into the cookie and on top.

The dough should be sticky and a little runny.

Air fry on a piece of parchment paper.

Let the cookie sit for 5 minutes outside of the air fryer to both cool down and to firm up.

Use oat flour instead of one or both of the flours, however, the texture may differ slightly.

Use pure maple syrup and not pancake syrup. The only ingredient should be maple syrup.

How to serve and store

Serve this s’mores cookie with a glass of dairy free or dairy milk, a cup of coffee, or tea.

Store in an airtight container, such as a baggie, and store on the counter. Enjoy within 3 days.

Taste and Texture

This single serve s’more cookie is perfectly sweet.

Ingredients

  • 2 Tbsp almond butter, use all natural and runny. Can sub any other nut/seed butter.
  • 2 Tbsp maple syrup, sub honey, agave or date syrup.
  • 1/2 tsp vanilla extract.
  • 2 Tbsp almond flour.
  • 2 Tbsp 1:1 gluten-free flour blend, see notes above. May sub oat flour.
  • 1/4 tsp salt.
  • 1/2 tsp baking powder.
  • 1 Tbsp vegan chocolate chips.
  • 1 Tbsp vegan marshmallows.
  • 1 Tbsp graham cracker, use vegan/gluten free if needed.

Directions

  1. To start, mix together almond butter, maple syrup and vanilla in a medium mixing bowl.
  2. Then, add in the almond flour, gluten-free flour blend, baking powder and salt. Mix until you have a sticky, semi runny dough.
  3. Fold in 1/2 of the vegan marshmallows, vegan chocolate chips and a piece of crushed of graham cracker.
  4. Next, place the dough on a piece of parchment paper and form into a round circle. Top with the rest of the vegan chocolate chips, graham cracker and vegan marshmallows.
  5. Place the cookie in the air fryer and fry at 350F for 10-12 minutes or until marshmallows are golden brown and cookie is firm to the touch.
  6. Let cool for 5 minutes before enjoying.
