S’mores Cookie Single Serve, Vegan Gluten-free

Ingredients in S’mores Single Serve Cookie
Sometimes, after dinner.. who am I kidding, all the time after dinner I crave something sweet. With 4th of July right around the corner I decided to make a single serve s’mores cookie that you can make in your air fryer or oven. This cookie is absolutely delicious and is made with better for you ingredients!
Grab these handful of ingredients below and let’s get cooking!
For the cookie
- almond flour
- gluten-free flour blend (I prefer Bob’s Red Mill 1:1 swap)
- peanut butter, or any other nut butter
- maple syrup
- salt
- baking powder
- vanilla
Toppings galore
- marshmallows, make sure they are vegan if you want this cookie to be vegan
- graham cracker
- vegan chocolate chips

How to make single serve s’mores cookie
From start to finish this cookie will be ready in as little as 12 minutes. However, it may take a bit longer if you are using the oven instead.
To start, mix together the wet ingredients such as peanut butter, maple syrup and vanilla.
Then, add in the dry ingredients like almond flour, gluten-free flour, baking powder and salt. Mix until you have a thick dough. You can stop there, or you can add in some chocolate chips, I prefer the later.
Next, roll the dough into a large ball and place it on a piece of parchment paper. Using the palm of your hand flatten slightly and then top with additional vegan chocolate chips, graham crackers and vegan marshmallows.
Place in the air fryer and fry at 350F for 8-10 minutes or until marshmallows are golden brown and cookie is firm to the touch. Let cool for 5 minutes before enjoying.
