Ingredients And Substitutions
These are the main ingredients and substitutions for S’mores Cookies. Scroll down to the recipe card for a full list of ingredients and instructions.
Of course you will need a graham cracker, chocolate bar and a giant marshmallow- that’s just a given.
For the chocolate chip cookie recipe, I recommend using grass-fed unsalted butter. Alternatively, you can use regular butter, vegan butter or coconut oil.
Vanilla extract is recommended for any baked good, it adds such a lovely flavor.
I used coconut sugar for a lighter alternative, it’s unrefined which doesn’t spike my blood sugar levels as much. Although, brown sugar or cane sugar both work great as well.
An egg will help to bind all the ingredients together and help the cookie have a lovely fluffy texture.
All purpose flour is highly recommend for the best texture. You can however, use a 1:1 gluten free alternative, however, please note this will alter the texture of the cookie slightly.
Baking soda will activate during baking allow this cookie to rise and have a fluffy texture.
Sea salt to help balance out all the flavors.
I prefer dark chocolate chips that I then, chop into small pieces. However, feel free to use any type of chocolate or milk chocolate.

How To Make
ONE: Start by making the cookie dough. In a bowl combine melted butter, vanilla extract, coconut sugar, and a room temperature egg. Whisk until ingredients are fully incorporated.

TWO: Next, fold in the all purpose flour, baking soda and salt. Then, add in the chocolate chunks and mix until fully combined. Cover and chill for a minimum of 30 minutes.


THREE: When ready, preheat the oven and line a baking sheet with parchment paper. Add 5 graham cracker squares to the sheet and top them off with a piece of chocolate and a giant marshmallow.


FOUR: Next, use a cookie scoop to scoop the dough and roll into a ball with the palm of your hands. Flatten between your palms and mend the cookie to the s’more.

FIVE: Bake, let cool and enjoy!

Tips And Tricks
It’s very important to chill your cookie dough so that they don’t spread too much during baking time.
After chilling, the cookie dough will be slightly sticky, that’s ok. Just work quickly and efficiently. You don’t want to warm up the dough too much when adding to the s’more.
Mend the cookie dough to the top of the graham cracker, this will prevent from falling over during baking time.
How To Serve And Store
Serve these s’mores cookies once they have rested for 5 minutes. Enjoy warm with a glass of ice cold milk.
Store in an airtight container on the counter and enjoy up to 4 days.


Taste And Texture
These s’mores cookies are sweet, and taste amazing. The perfect blend between a warm gooey s’mores cookie and a chocolate chip cookie.
The texture is crispy on the edges, but soft and gooey in the center. There is a slight crunch from the graham cracker on the bottom and the inside is filled with melted chocolate and a gooey marshmallow.
