S’mores Oatmeal Cookies Vegan Gluten-Free

Delicious, moist and chewy gluten-free and vegan s’mores cookies! These cookies are made with gluten-free oats, oat flour and the famous granola butter for that natural and tasty cookie butter taste!

Every fourth of July I am pulled to create a new s’mores recipe. This year is no different, I updated my original oatmeal cookie and made it into a campfire edition and I’m really so impressed!

These cookies turned out crispy on the outside but still chewy and soft to bite into. I mixed in marshmallows and chocolate into the batter, but also topped the cookies off with more of the two before going into the oven. These allowed for the tops of the cookies to look like soft pillowy goodness.

I even added in Kween and Co Granola Butter as well as graham cracker to give these cookies that traditional s’mores taste! So what are you waiting for? Let’s get into the details.

Ingredients needed to make s’mores oatmeal cookies

I used a handful on ingredients that I already had on hand to make this recipe. However, there are a few substitutions available incase you don’t have exactly all the same ingredients.

Gluten-free old fashioned oats– Gluten-free oats are necessary if you have a gluten allergy. Otherwise, traditional old fashioned oats will work perfectly fine. Make sure they are old fashioned and not quick oats otherwise they will turn out soggy.

Oat flour– If you don’t have any oat flour on hand, you can simply make you own by blending oats. Make sure you grind them very fine. This should take about a minute for the amount needed for this recipe.

Flax seed meal– I love to add ground flaxseed meal into my recipes. This addition does not change or alter the recipe but instead adds omega-3s and lignans. Lignans have both plant estrogen and antioxidant qualities which is awesome! If you don’t have flax seed meal, you can omit.

Cinnamon– Is it really an oatmeal cookie without cinnamon?

Coconut oil and Avocado oil– I used a mixture of the two, simply because I didn’t have enough coconut oil. However, the avocado oil gave these cookies a great flavor! If you don’t have both, you can simply use one of the other.

Granola Butter- This ingredient is KEY. If you have never tasted granola butter before I kindly encourage you to order some online, like yesterday. This stuff is literal crack. It tastes like cookie butter but has way better ingredients for you. I love to add granola butter to my cookie recipes because it brings in a flavor that no nut butter can really relate too.

Maple Syrup- If you don’t have maple syrup, you can simply use any alternative liquid sweetener. Agave, honey, date syrup etc.

Apple sauce– Because these cookies are vegan, apple sauce is a great way to bind the cookies together instead of an egg. Trust me, you won’t even taste it! I always buy organic apple sauce. Always be sure the check the ingredients on the back. I really like the one from Trader Joe’s, the only ingredient in the apple sauce is apples!

Marshmallows- Mini marshmallows work best. Again, I really like the one from Trader Joe’s, they are vegan.

Dark Chocolate Chips– I am a dark chocolate kind of gal, however, you can use any chocolate chips that you’d like.

Graham Cracker- one graham cracker is all you need for this recipe! Just enough to add in the flavor and a little bit of texture.

How to make delicious s’mores oatmeal cookies

These oatmeal s’mores cookies come together within 30 minutes. The recipe is simple to make and only requires a few ingredients… and dishes which you all know is a win win in my book!

To start, you will want to preheat your oven to 350F and prepare your baking sheet with parchment paper or a silicon baking mat. I like this one here from target!

In a large bowl, combine your dry ingredients. This will be the oats, oat flour, cinnamon, and flaxseed meal. Mix until well combined.

In a separate bowl, combine your wet ingredients. This will be the coconut and avocado oil, granola butter, maple syrup, and apple sauce and mix until well incorporated. Add dry ingredients to wet and with a spatula fold until the ingredients are well combined.

Add in the chocolate chips, graham cracker and marshmallows and mix once more.

Using a cookie scoop, scoop the batter onto the prepared baking sheet. Top off with additional marshmallows and chocolate chips as well as flatten the cookies slightly. Bake in the oven for 13 minutes. Allow to cool for 5 minutes before moving to a cooling rack.

  • 1 + 1/4 cup old fashioned oats (regular or gluten-free)
  • 1/4 cup oat flour
  • 3 Tbsp ground flaxseed meal
  • 1 tsp cinnamon
  • 2 Tbsp coconut oil
  • 2 Tbsp avocado oil
  • 1/2 cup granola butter
  • 1/4 cup maple syrup
  • 1/3 cup apple sauce
  • 1/4 cup marshmallows + more for topping
  • 1/4 cup dark chocolate chips + more for topping
  • 1 graham cracker

Directions

  1. Preheat oven to 350F and prepare baking sheet with parchment paper or a silicon baking mat.
  2. In a medium bowl, combine oats, oat flour, cinnamon, and flaxseed meal. Mix until well combined.
  3. In a separate bowl, combine coconut and avocado oil, granola butter, maple syrup, and apple sauce and mix until well incorporated.
  4. Add dry ingredients to wet and with a spatula fold until the ingredients are well combined.
  5. Using your hands, crush the graham cracker finely or into bite sized pieces, then, add in the marshmallows and chocolate chips and mix once more.
  6. Using a cookie scoop, scoop the batter onto the prepared baking sheet. Top off with additional marshmallows and chocolate chips as well as flatten the cookies slightly with your hands.
  7. Bake in the oven for 12-15 minutes. I baked mine for 13 and found it to be the perfect texture.
  8. Allow to cool for 5 minutes before moving to a cooling rack.

Notes

If you don’t have granola butter, you can sub any nut butter that you’d like. Peanut, almond, sun butter etc.
You can use all avocado or all coconut oil.
