These are the main ingredients and substitutions for S’mores Rice Krispie Treats. Scroll down to the recipe card for a full list of ingredients and instructions.

Use brown butter to really takes these treats to the next level. Butter is browned on the stovetop which creates a nutty flavor and aroma. You can also just use regular melted butter if preferred.

Rice crispy cereal is necessary for this recipe and creating that soft, light and crunchy crisp.

I recommend using mini marshmallows instead of large ones because they melt quicker. I use them in both the mixture and sprinkled more on top.

Vanilla extract adds the perfect amount of extra flavor.

Feel free to use chocolate chips or a chocolate bar. I used Hu Kitchen Hazelnut chocolate bar which added a great flavor, but any type of chocolate works.

Graham crackers are added both into the mixture and sprinkled on top. Honey flavor is recommended but feel free to use any kind.

How To Make

ONE: Start by browning the butter on the stovetop. In a medium skillet, add in the butter and heat over medium to low heat, stirring frequently until butter is browned.

TWO: Add brown butter into a large pot with the mini marshmallows and vanilla extract. Mix until marshmallows are fully melted. Add in cereal and mix until fully incorporated, then add in chocolate and graham crackers and mix once more.

THREE: Working quickly, press mixture into a non-stick pan and add on toppings. Put a piece of parchment paper over the top and press toppings into the mixture. Set aside to set for 20 minutes before slicing into.

Tips And Tricks

Make brown butter to really elevate this treat. I used salted grass-fed butter, but you can also use unsalted and add in extra salt if desired.

Have all ingredients prepped and out because this recipe goes quickly once you start.

Use mini marshmallows for best results, these melt quicker than large marshmallows.

I used a chocolate bar, but you can also use chocolate chips if desired.

Either grease a pan with butter, line it with parchment paper or use a really good non-stick pan so that way the treats do not stick.

How To Serve And Store

Serve these S’mores Rice Krispie Treats once they have set for 20 minutes. Enjoy at room temperature of pop them in the microwave for 10-15 seconds for a slightly warm and gooey treat.

Store leftovers in an airtight container on the counter and enjoy up to 5 days. You can reheat them in the microwave for 15-20 seconds to soften them up a bit before serving.

These treats can also be stored in the freezer. Wrap them tightly in plastic wrap, and place them in the freezer for up to 3 months. To thaw, place them on the counter for about 30 minutes to an hour or unwrap and place them in the microwave for 15-20 seconds until slightly warm.

Taste And Texture

These S’mores Rice Krispie Treats are sweet, gooey and have a lovely nutty flavor from the brown butter. They have a gooey, crispy and soft texture and taste like the classic S’mores dessert, but made better.

Can I use a different cereal other than rice crispy?

If you have something in mind that is similar then, I don’t see why not.

Mine turned out very dense, why?

You might have overpacked them! When pressing the mixture into the pan, do it gently so that way it turns out soft and gooey.

Can I make these vegan?

Absolutely! Just be sure to use vegan ingredients like vegan marshmallows, chocolate, graham crackers and cereal.

Ingredients

  • 3/4 cup salted grass fed butter, browned
  • 7 cups mini marshmallows + more for topping
  • 2 tsp vanilla extract
  • 5 cups rice crispy cereal
  • 2 chocolate bars, chopped or 1 cup chocolate chips
  • 4 graham cracker sheets, divided

Directions

  1. Start by browning the butter on the stovetop. In a medium skillet, add in the cubed butter and heat over medium to low heat, stirring frequently until butter is browned. This will take about 3-4 minutes. Watch it carefully and remove from heat as soon as it browns to avoid the butter burning.
  2. Add brown butter to a large pot, over medium to low heat, and be sure to scrape the sides of the pot to get all of the brown bits, this is where the flavor is. Add in the mini marshmallows and vanilla extract and mix until marshmallows are fully melted.
  3. Add in cereal and mix until fully incorporated. Remove from heat.
  4. Then, add in 1 bar of chopped chocolate, or 1/2 cup of chocolate chips and mix a few times. Then, add in 2 graham cracker sheets that have been broken into pieces with your fingers. Mix well.
  5. Working quickly, press mixture into a 9x9 inch non-stick pan that is either coated with butter, or parchment paper, and add on more mini marshmallows, graham cracker pieces and chopped chocolate.
  6. Put a piece of parchment paper over the top and gently press toppings into the mixture.
  7. Set aside to set for 20 minutes before slicing into and enjoying!
