Soft Baked Gluten-free Chocolate Chip Cookies

Soft baked grain free chocolate chip cookies are a delicious chewy cookie made with a blend of almond flour and coconut flour. They are also low in sugar and sweetened with date syrup and topped off with no sugar added chocolate chips.

I love a good soft- baked cookie as much as the next person. I wanted to make sure these cookies were soft, chewy but still held their form. I used a blend of coconut flour and almond flour as the base, so these cookies are also grain free + gluten-free!

It might be hard to believe that these cookies are dairy free and gluten-free, but trust me! They are so delicious!

These grain free chocolate chip cookies are a favorite around here. They truly are a melt-in-your mouth divine cookie that everyone will love. It resembles the taste of a traditional chocolate chip cookie but with more than half of the sugar. These cookies are only sweetened with a small amount of date syrup.

I love to use Lily’s Sweets dark chocolate chips. They are non-dairy and have no added sugar, instead sweetened with stevia. However, you can use whichever chocolate chip you prefer! If you want these cookies to be dairy-free, just make sure you use dairy chocolate chips!

Ingredients

  • 3 Tbsp vegan butter
  • 3 Tbsp date syrup
  • 2 eggs
  • 1 tsp vanilla
  • 1 + 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 2 Tbsp ground flaxseed meal
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips + more for topping

Directions

  1. Preheat oven to 375F and line a baking sheet with parchment paper or a silicon baking mat.
  2. In a medium bowl, combine butter and date syrup and mix with a fork until well combined. Do not soften butter, you want it to be hard while combining it with date syrup.
  3. Then, add in eggs and vanilla and mix once more.
  4. In a separate bowl, combine almond flour, coconut flour, flaxseed meal, baking powder and salt and mix until well incorporated.
  5. Add dry ingredients to wet and mix with a spatula until dough starts to form.
  6. Fold in chocolate chips.
  7. Using a cookie scoop, scoop batter and place on baking sheet. Flatten slightly with fingers and top with additional chocolate chips if desired.
  8. Bake in the oven for 8-10 minutes.
