Strawberry Shortcake Overnight Oats are the perfect breakfast meal prep to make at the start of the week. These overnight oats are made with almond milk, coconut yogurt, maple syrup and topped with fresh juicy strawberries and graham crackers.

Ingredients and Substitutions

Old-fashioned rolled oats work best for this recipe. You can use organic like I did or opt for certified gluten-free rolled oats if needed.

Chia seeds help with texture and create a creamy consistency while adding a slight crunch.

Ground flaxseeds enhance the texture and help bind the ingredients together.

Coconut yogurt gives the recipe a slight tang, similar to cheesecake. You can use any dairy-free or regular yogurt, like Greek yogurt, for a thicker texture.

Almond milk (or any nut milk or dairy-free alternative) works well, but regular milk can also be used if you don’t need the recipe to be dairy-free.

Maple syrup adds natural sweetness, but you can also use honey, agave, or date syrup based on preference.

How to make

ONE: Mix together organic rolled oats, chia seeds and ground flax seeds.

TWO: Add in yogurt, almond milk and maple syrup.

THREE: Mix well, cover and store for a minimum of two hours or overnight.

FOUR: When ready, top with fresh strawberries, and one crushed graham cracker and enjoy!

Taste and Texture

These overnight oats have a lovely texture that is creamy, thick and delicious. They aren’t overly sweet with only 1 tbsp of maple syrup, but the fresh juicy strawberries add a bit of natural sweetness as well.

Ingredients  

  • 1/2 cup organic old fashioned oats
  • 1 tbsp chia seeds
  • 1 tbsp ground flax
  • 1 tbsp coconut yogurt
  • 3/4 cup almond milk
  • 1 tbsp maple syrup
  • Toppings
  • fresh strawberries
  • 1 graham cracker piece

Instructions

  • In a container with a lid, add in the oats, chia seeds and ground flax.
  • Next, add in the coconut yogurt, maple syrup and almond milk.
  • Mix until ingredients are well incorporated, cover and store in the fridge for a minimum of 2 hours or overnight.
  • When ready, mix really well and top with fresh strawberries and graham crackers.

Notes

  • Overnight oats will stay fresh up to 5 days maximum.
  • Store fruit in the containers only for three days, otherwise add toppings the day of.
  • Overnight oats can be enjoyed cold or warm.
