What are Goji berries?

Used in traditional Chinese remedies, Goji Berries are nutrient-rich and are often referred to as “red diamonds” on Asian markets because of their reputation for supporting the body’s natural defenses as well as overall health and vitality- BareOrganics website.

How can you eat Goji berries?

Goji berries taste great on top of smoothie bowls, cereal, oatmeal or baked into a muffin like I did with the recipe. I usually will just sprinkle a few goji berries on top of my smoothie bowl, however they also taste great baked into a recipe.

When using goji berries in a recipe, it’s important to note that you must soak the goji berries in warm water before hand. This will soften the goji berries and allow them to bake nicely in the oven. If you skip this step they will be hard to eat.

Ingredients

  • 2 cups of whole-wheat flour
  • 1/2 Tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 ripe bananas
  • 2 eggs
  • 1 + 1/2 cup almond milk
  • 1 tsp vanilla
  • 1/2 cup shredded coconut
  • 1 cup dark non-dairy chocolate chips
  • 1/2 cup of goji berries

12 jumbo muffins

Directions

  1. Soak goji berries in 2 cups of hot water for 15 minutes.
  2. Preheat oven to 350F and line a jumbo muffin tin with liners or spray with non-stick spray.
  3. In a large bowl, combine flour, baking powder, cinnamon and salt.
  4. In a separate medium bowl, mash the bananas then whisk in the eggs.
  5. Add in the almond milk and vanilla and mix until well combined.
  6. Then, add in the shredded coconut, goji berries and chocolate chips.
  7. Add mixture to dry ingredients and mix with a spatula until just combined.
  8. Pour batter into prepared muffin tin and bake in the oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Notes

If using a regular sized muffin tin, reduce the baking time to 18-20 minutes.
