I love these! I did blend the dates in with all the wet ingredients because I’m lazy and don’t like to chop them and it worked really well. I also didn’t add any sugar and just added a few extra dates to make up for that. My husband who has a major sweet tooth is also obsessed with these!

In a large bowl, whisk together flour, coconut sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.


In a separate bowl, whisk mashed banana, Greek yogurt, milk, egg, melted butter or coconut oil, and vanilla until smooth.


Pour wet ingredients into dry and gently fold until just combined.


Add in the add-in’s. Batter should be thick but pourable — let it rest 5 minutes to fully thicken.


Cook on a greased skillet over medium-low heat, using about ¼ cup batter per pancake. Cook low and slow for thick, fluffy centers.
