The main ingredient in these vegan brownies is of course the spotty bananas. Using one’s that are ripe or over ripe will provide a much naturally sweeter brownie. Alternatively, you can use pumpkin instead.

Almond butter is a healthy fat that will add both flavor and texture to this brownie recipe. You may use peanut butter, cashew butter or for a nut-free option sun butter or oat butter.

Vanilla extract is necessary for any baked good.

Maple syrup adds the perfect amount of sweetness to these brownies and is also an unrefined sweetener. You can easily swap it out for coconut sugar, cane sugar, brown sugar or even monk fruit sweetener.

Cacao powder will add that rich, deep chocolate flavor. Coco powder will also work.

Baking soda will work in this recipe to add height will giving these brownies a fluffy texture.

How To Make

ONE: Add bananas to a medium bowl and mash until there are little to no chunks left. Then, add in the almond butter, maple syrup, and vanilla extract. Whisk until fully combined.

TWO: Next, add in the cacao powder, oat flour, baking soda and salt. Use a rubber spatula to full incorporate. Then fold in the chocolate chips.

THREE: Pour brownie batter into prepared 8×8 baking dish and bake. Allow to cool before slicing into and enjoying.

Ingredients

  • 3 spotty bananas, about 1.5-2 cups mashed
  • 1/2 cup almond butter, can sub any other nut or seed butter
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup, may sub coconut sugar, brown sugar or cane sugar
  • 1/3 cup cacao powder
  • 1 tsp baking soda
  • 3/4 cup oat flour, may sub all purpose or a 1:1 gluten free flour blend
  • 1/2 tsp salt
  • 1/2 cup chocolate chips, + more for topping

Directions

  1. Preheat oven to 375F and prepare an 9x9 or 8x8 baking dish with parchment paper.
  2. In a medium bowl, add in the spotty bananas and mash until there are little to no chunks left.
  3. Next, add in the almond butter, maple syrup, and vanilla extract. Whisk until ingredients are well incorporated.
  4. Add in the oat flour, cacao powder, baking soda and salt. Use a rubber spatula to mix until a thick brownie batter is formed.
  5. Fold in the chocolate chips last then add batter to prepared dish.
  6. Spread evenly and top with more chocolate chips if desired.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool completely before slicing into and enjoy! I like to enjoy mine warm with a dollop of cool whip, dairy free caramel and diced hazelnuts.

These were delicious! As someone who is gluten and dairy free, they really satisfied my craving and were super fudgy!
