Almond flour makes these peanut butter balls have a smooth and creamy texture. I’m sure you can also use oat flour which would still taste great, just with a bit of a more dense texture.

Vanilla extract adds flavor to any dessert recipe.

Maple syrup is my favorite unrefined sweetener to use in my recipes. You can also use agave, honey or date syrup. However, date syrup will turn the mixture slightly darker.

It’s best to use a creamy, all natural peanut butter for this recipe which means one where the only ingredients is peanuts.

How To Make

ONE: In a bowl, mix together the peanut butter, maple syrup and vanilla extract.

TWO: Add in the almond flour and mix until well combined. Use a cookie scoop and roll into balls, then place on a baking sheet that is lined with parchment paper and freeze.

THREE: Melt dark chocolate and then use a toothpick and dip the bottoms of each ball in the melted chocolate, leaving an opening at the top. Place back on the parchment paper and freeze again until firm, about 15 minutes.

Mix together wet ingredients fully before adding in the dry.

Use a cookie scoop to make uniform balls.

A toothpick inserted in the center makes dipping the peanut butter balls easy and seamless.

Freeze until the chocolate is firm and then these can be stored in the fridge if desired.

How To Serve And Store

Serve these Vegan Buckeyes once the chocolate shell has fully hardened, about 10-15 minutes in the freezer.

These gluten free peanut butter balls are best stored in an airtight container in the fridge for 7-10 days, or in the freezer for up to 90 days.

Can I use a different flour instead of almond flour?

Oat flour would also work!

My dough seems to be too thick?

This could be because of the type of peanut butter that was used. It’s best to use one that is naturally creamy and runny. If this happens, add in more maple syrup and peanut butter to the mixture. You can also add in a touch of melted coconut oil.

How do you melt chocolate?

I always melt mine in the microwave with a little bit of coconut oil. I melt it in 30 second increments, stirring well in between each round.

Ingredients

  • 1/4 cup pure maple syrup
  • 1/2 cup creamy all natural peanut butter
  • 1 tsp vanilla extract
  • 1 1/4 cup almond flour
  • 1 cup vegan dark chocolate chips
  • 1/2 tbsp coconut oil, for melting chocolate

Directions

  1. In a bowl, mix together the peanut butter, maple syrup and vanilla extract.
  2. Add in the almond flour and mix until well combined.
  3. Use a cookie scoop and roll into balls, then place on a baking sheet that is lined with parchment paper and freeze while you melt the chocolate.
  4. Add chocolate to a bowl with coconut oil. Microwave in 30 second increments, stirring well between each round until fully melted.
  5. Use a toothpick and poke it in the center of each ball, dip the bottoms in the melted chocolate, leaving an opening at the top.
  6. Place back on the parchment paper and freeze again until firm, about 15 minutes.
  7. Enjoy once chocolate is firm to the touch.
