Ingredients And Substitutions

These are the main ingredients and substitutions for Vegan Ferrero Rocher. Scroll down to the recipe card for a full list of ingredients and instructions.

You can buy roasted hazelnuts, or raw hazelnuts and roast them at home. I prefer roasting them myself!

Cacao powder is going to give this recipe a deep and rich chocolate flavor.

Vanilla extract adds flavor to any baked good!

A touch of salt to help balance out all the flavors.

Pure maple syrup is an all natural sweetener that I love using in my recipes. It’s refined sugar free and adds a lovely caramel like flavor to any baked good.

Use a good quality vegan dark chocolate, otherwise if you aren’t vegan you can substitute for any milk or dark chocolate. To keep this recipe refined sugar free, look for a sugar free chocolate.

A touch of coconut oil is going to help melt the dark chocolate and create a smooth and creamy texture.

How To Make

ONE: Add the roasted hazelnuts to a clean dish towel and rub vigorously to remove the skins. Then add them to a food processor and blend until a butter starts to form.

TWO: Next, add in the cacao powder, vanilla extract, salt and maple syrup and blend for an additional 1-2 minutes. The key is to get a workable dough that you can easily pick up and roll.

THREE: Roll into bite sized balls, place a roasted hazelnut in the center and roll until it’s completely hidden. Place on a plate that’s lined with parchment paper and place the truffles in the freezer for 30 minutes to harden

FOUR: In the meantime, melt the vegan dark chocolate until creamy and smooth. Add 1/2 cup of roasted hazelnuts to food processor and pulse for a few times until you have chopped/ diced pieces. Add these to a bowl and set aside.

FIVE: Next, remove the truffles from the freezer and dip and roll in the melted chocolate, then immediately coat in the diced roasted hazelnuts. Place back on the parchment paper and back into the freezer to harden completely, about 20 more minutes. Remove from freezer and enjoy!

Tips And Tricks

To save on time, buy pre-roasted hazelnuts.

To remove the skin from the hazelnuts, add them to a clean dish towel and rub together until the skinds fall off. This takes about 5 minutes.

Your hands may be very oily when rolling the hazelnut butter into balls, this oil is natural from the roasted hazelnuts. Don’t worry, the truffles won’t taste oily at all.

How To Serve And Store

Serve these Vegan Ferrero Rocher straight out of the fridge and enjoy cold or at room temperature.

Store in an airtight container in the fridge and enjoy within 7-10 days, or store in the freezer and enjoy within 30-60 days. If frozen, bring to room temperature before eating.

These Vegan Ferrero Rocher taste just like the real thing, but better! They have a rich, deep chocolate flavor and are filled with hazelnut.

The texture is chewy, creamy and crunchy with each bite.

Frequently Asked Questions

Can I use store-bought nutella instead of make it from scratch?

Yes! I don’t see why not. You may need to add in a thickening agent like almond flour, coconut flour or oat flour.

Ingredients

Truffles

  • 1 + 1/4 cup roasted hazelnuts, skins removed
  • 1/3 cup unsweetened cacao powder
  • 1 tsp vanilla extract
  • 1/4 tsp of sea salt
  • 1/3 cup pure maple syrup
  • 9 roasted hazelnuts (for the center)

Topping

  • 1/2 cup roasted hazelnuts, chopped for coating
  • 1/2 cup vegan dark chocolate chips
  • 1 tsp coconut oil, for melting chocolate

Directions

  1. If using raw hazelnuts, you will need to first roast them in the oven at 375F for 12-15 minutes. Then, add roasted hazelnuts to a clean dish towel and rub together for about 5 minutes to remove the skin. 
  2. Next, add roasted hazelnuts to a food processor or blender and blend until a butter starts to form (about 2-3 minutes, depending on blender/food processor)
  3. Add in the cacao powder, vanilla extract, salt and maple syrup and blend for about 1-2 additional minutes. The key is to get a workable dough that you can easily pick up and roll. 
  4. Using a cookie scoop, scoop dough and roll into a ball. Place a roasted hazelnut in the center and roll until it's completely hidden. Place on a plate that's lined with parchment paper. 
  5. Place the truffles in the freezer for 30 minutes to harden. 
  6. In the meantime, melt vegan dark chocolate until smooth and creamy. 
  7. Add 1/2 cup roasted hazelnuts to food processor and pulse for a few times until you have chopped/ diced pieces. Add these to a bowl and set aside. 
  8. Next, remove the truffles from the freezer and dip and roll in the melted chocolate, then immediately coat in the diced roasted hazelnuts. Place back on the parchment paper and repeat. 
  9. Place the truffles back into the freezer to harden completely, about 20 more minutes. 
  10. Remove from freezer and enjoy!
