Use over-ripe bananas for a more naturally sweeter banana bread.

I used almond milk for this recipe, however, you can use any type of milk or nut milk alternative such as cashew, hemp, coconut, oat, or even dairy but that won’t make this banana bread vegan anymore.

Maple syrup is a refined sugar free sweetener that I love using in my recipe. You can leave it out, or sub honey or agave.

Vanilla extract adds a lovely flavor.

Use Chia eggs which is just chia seeds mixed with water. It’s a vegan egg replacement in most recipes. You can use flax eggs or regular chicken eggs if you don’t mind it not being vegan.

Cinnamon adds a warm and lovely flavor.

Salt helps balance out all the flavors.

A touch of baking powder helps give this banana bread recipe that fluffy texture.

You can use homemade or store bought oat flour, which is just oats blended into a fine flour.

You can use dairy or dairy free chocolate chips or chocolate chunks.

how to make

ONE: Make the chia eggs by combining 2 tbsp of chia seeds with 5 tbsp of water. Mix well and set aside to thicken.

TWO: In a large bowl, mash the bananas then add in almond milk, maple syrup, vanilla and chia eggs. Whisk until well combined.

THREE: In a separate bowl, combine oat flour, baking powder, salt and cinnamon. Then, add dry ingredients to wet and mix with a spatula until well incorporated.

FOUR: Option to add in chocolate chips to the batter. I like to add mine on top, but it’s a personal preference!

FIVE: Pour batter into prepared loaf pan, sprinkle with chocolate chips. Bake for 45-50 minutes for until a toothpick inserted in the center comes out clean. Let cool completely before slicing into and enjoy!

Tips and tricks

Make your own oat flour by blending oats for 20-30 seconds.

Add chocolate chips into the batter and on top! When adding on top, make sure to gently but firmly press them into the batter.

Let the loaf cool completely before slicing into.

Prepare your loaf pan by lining it with parchment paper and coating it with non-stick spray.

How to serve and store

Serve this Oat Flour Banana Bread with a cup of coffee, protein shake or cup of tea. Serve it warmed up with a touch of almond butter, peanut butter or cashew butter.

Store this banana bread in an airtight container on the counter and enjoy within 3-5 days.

Taste and Texture

This banana bread isn’t overly sweet, but instead it’s subtle sweet which is perfect in my opinion.

It has a texture that is similar to baked oatmeal: chewy, fluffy and moist.

  • 3 over-ripe bananas
  • 1/2 cup almond milk
