I highly recommend using a high quality cottage cheese for best results. Not only will this enhance the flavor, but it will also be a higher quality protein. I actually used low fat cottage cheese and it worked great.
Add in a sweetener of choice, I prefer using maple syrup because it’s a unrefined all natural sweetener, however you can use honey, agave or date syrup. Even cane sugar, brown sugar or monk fruit sweetener will work!
Fresh strawberries are going to naturally sweeten the mixture and also give that lovely pink color. You can also use frozen if preferred!
For more flavor and texture, I adding in peanut butter, but I think i’d prefer cashew butter or almond butter instead! You can make it nut free also by using sun butter or oat butter.

How To Make
ONE: In a food processor or blender, add in the cottage cheese, maple syrup, strawberries, and peanut butter. Blend until smooth and creamy.


TWO: Pour the mixture into a loaf pan. I mixed in strawberries and topped it off with more strawberries, and then sprinkled with graham crackers before freezing till firm, about 4 hours.


THREE: When ready, scoop and enjoy!

Tips And Tricks
Use a high quality cottage cheese for best results. I used low fat and it worked great!
Feel free to make it your own by adding in your favorite toppings such as oreos, peanut butter, chocolate, banana, or any other fruit!
Use a blender or food processor to combine all the ingredients.
For easy clean up, I added some parchment paper to my loaf pan, but this isn’t necessary.
Keep it covered to prevent freezer burn.
How To Serve And Store
Serve this Viral Cottage Cheese Ice Cream once it is firm enough and has an ice cream consistency, about 4 hours. Serve with fresh fruit, peanut butter, almond butter or your favorite ice cream toppings.
Store in an airtight container with a lid, and place in the fridge! Enjoy within 30-60 days.

I really wanted to try this recipe because I’m trying to increase my protein intake, and I said I could try with adding cottage cheese to my diet. First of all, I’m not new at cooking, and follow the recipe as described but didn’t turn out well. The texture was great as soon as I finished blending, the taste not my favourite (I don’t think strawberry-peanut butter is the better option but that’s a personal opinion). The issue is that I made it at night so at the following day it was impossible to scoop it out of the container. It was hard like a rock. Not ice-cream texture at all! I had to transfer the container to the fridge but the texture was ruined.
Hi Maria, I’m sorry you didn’t like the flavor, you can also add a different nut butter. However, as stated in the recipe: to achieve the perfect texture only let it freeze for 4 hours. Leaving it in overnight will then need to be thawed on the counter for a couple hours to make it scoopable.
