How to Make
Spread the dill pickle chips out in an even layer on a large baking sheet. Sprinkle half of the grated parmesan over the top. Add pieces of prosciutto, salami, and chunks of brie evenly across the chips.

Spoon small dollops of fig jam and apricot preserves throughout so it melts evenly.

Bake for 8–10 minutes, or until the brie is melted and everything looks bubbly. Remove from the oven and immediately drizzle with hot honey. Finish with the remaining parmesan and fresh chives if you’d like. Serve right away and enjoy while warm!

Tips and Tricks
- Use thicker kettle-style dill pickle chips for the best crunch. They hold up better under melted brie, cured meats, and warm preserves without getting soggy.
- Scatter the brie in small chunks so it melts evenly. Bigger pieces can pool in one spot, so keeping the brie bite-sized ensures every chip gets a little cheesy moment.
- Add the jams in tiny dollops. A little goes a long way — small spoonfuls help you get that perfect sweet-savory balance without overwhelming the nachos.
- Don’t skip the hot honey drizzle. It ties all the flavors together and boosts that salty-sweet bite that makes these nachos so addictive.
- Serve immediately for peak texture. These are best fresh from the oven when everything is gooey, crisp, and warm — they’re not a make-ahead recipe, but they only take minutes!
How to Save and Store
These nachos are definitely best enjoyed fresh while the brie is melty and the chips are still crisp, but if you happen to have leftovers, you can store them in an airtight container in the refrigerator for up to 1 day. To reheat, pop them back in the oven or air fryer at 350°F for 5–7 minutes to help the chips crisp back up. They won’t be quite as crunchy as the first round, but they’ll still taste delicious.
I don’t recommend freezing this recipe.
