Total Time 20 minutes
Servings 4 jars

Ingredients

Cheesecake Layer

  • cups cottage cheese (Good Culture recommended)
  • ½ cup Greek yogurt (I use Fage 5% for the creamiest texture)
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 1 cup fresh strawberries (sliced)
  • 1 cup freeze-dried strawberries (optional, but highly encouraged)

Chocolate Crust

  • ½ cup Simple Mills Chocolate Thins, crushed (can sub Oreos with the filling removed)

Chocolate Topping

  • cup chocolate chips
  • 1 tsp coconut oil (for smoother melting)

Instructions

  • Add the cottage cheese, Greek yogurt, maple syrup, vanilla, and fresh strawberries to a food processor. Blend until smooth and creamy, about 45 seconds.
  • Add the freeze-dried strawberries and pulse just until combined. Transfer the cheesecake mixture to the refrigerator while you prepare the crust.
  • Add the chocolate cookies to a blender or food processor and blend into a fine crumb.
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring well between each round, until smooth.
  • Assemble the jars by adding a layer of chocolate crust, followed by the strawberry cheesecake mixture, then a spoonful of melted chocolate on top.
  • Refrigerate for 10 minutes to set.
  • Finish with whipped cream and a fresh strawberry, if desired.

Notes

  • Full-fat Greek yogurt gives the creamiest texture and most “real cheesecake” feel.
  • Simple Mills Chocolate Thins work great for the crust, but Oreos with the filling removed are a fun swap for a more classic dessert flavor.
  • You can easily double this recipe to make a larger batch for parties, Galentine’s night, or meal prep desserts for the week.
