These Chocolate Cottage Cheese Truffles are a creamy, no-bake dessert made with simple ingredients and coated in a rich chocolate shell. They’re easy to make, perfectly bite-sized, and ideal for keeping on hand when you want a quick chocolate treat.

Truffle Base
1cupcottage cheese(I prefer good culture)
1/2cupcacao powder
3/4cupchocolate protein powder(I used Ritual, you can also use vanilla)
1/4cupmaple syrup
Coating
3/4cupdark chocolate chips
1tspcoconut oil
Topping
Flaky sea salt
Instructions
Add cottage cheese, cacao powder, protein powder, and maple syrup to a blender or food processor. Blend until completely smooth and thick.
Transfer to a bowl and refrigerate for 20–30 minutes to firm up (this makes rolling much easier!!). NOTE: the batter is sticky and a little messy to roll, if you used a different brand of cottage cheese you may need to add more cacao powder and protein powder to thicken the batter.
Scoop and roll into 12–14 bite-sized balls. Place on a parchment-lined tray and place back in the refrigerator while you melt the chocolate.
Microwave chocolate chips with coconut oil in 20–30 second intervals, stirring until smooth.
Using a fork, dip each truffle into the melted chocolate, letting the excess drip off. Place back on the tray with parchment paper. You may need to work in batches to keep the integrity of the truffles.
Sprinkle flaky sea salt on top while the chocolate is still warm.
Refrigerate or freeze for 10–15 minutes until the chocolate shell is set and enjoy that hard chocolate shell with gooey center!
Notes
Not all protein powders will thicken the batter the same way, I use Ritual protein powder so if you are using another brand you may need to add more to reach desired consistency.
Rolling these into balls IS A LITTLE MESSY, but it's worth it in the end for that gooey, creamy center!
If you batter is too loose, either add in more cacao powder and/or you can add in 1/4 cup of almond flour, although the recipe will no longer be nut free.
If dipping feels messy, you can also drizzle the chocolate over the top instead or skip the chocolate coating and roll the dough in cacao powder for a true truffle flavor.
