  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 2-3 tbsp water or milk (as needed to thin)

Sesame Coconut Rice

  • 1 cup jasmine rice
  • 3/4 cup canned light coconut milk
  • 1/4 cup water

For Topping

  • Sesame seeds
  • Extra green onions
  • Lime wedges
  • Extra bang bang sauce

Instructions

Cook the sesame coconut rice

  • Rinse jasmine rice well.
  • Add to a saucepan with coconut milk, water, sesame oil, and salt.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until tender.
  • Remove from heat and let sit covered for 10 minutes, then fluff with a fork, add in sesame seeds and mix well.

Make the bang bang sauce

  • Add Greek yogurt, sweet chili sauce, sriracha, rice vinegar, honey, garlic powder, and water/milk to a bowl.
  • Whisk to combine until completely smooth and creamy.
  • Set aside.

Cook the turkey

  • Heat oil in a large skillet over medium-high heat.
  • Add ground turkey and break apart.
  • Season with salt and pepper.
  • Cook 5–7 minutes until browned.

Add veggies

  • Add bell pepper, zucchini, green onions, garlic, and ginger.
  • Cook another 4–5 minutes until veggies soften and turkey is fully cooked.

Add sauce

  • Pour half to two-thirds of the bang bang sauce into the skillet and stir until everything is coated and creamy.
  • Reserve remaining sauce for topping.

Assemble bowls

  • Add sesame coconut rice to bowls.
  • Top with bang bang turkey mixture.
  • Drizzle with remaining sauce and garnish with sesame seeds, green onions, and lime.

Notes

  • Greek yogurt adds creaminess and tang without needing mayo.
  • Sweet chili sauce brands vary in sweetness, so adjust honey if needed.
  • Use jasmine rice for the fluffiest sesame coconut rice texture.
  • Add shredded carrots, cabbage, or cucumber for extra crunch.
  • Fresh lime at the end brightens the whole bowl.
