Cook Time 25 minutes
Total Time 30 minutes
Servings 4 cups

Ingredients

  • 2 cups of old fashioned rolled oats
  • 1/2 cup slivered almonds
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup ground flax seed
  • 1/4 tsp salt
  • 1 Tbsp ground cinnamon
  • 1/4 cup tahini (or sun butter, can also use almond butter or cashew butter)
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup dried blueberries

Instructions

  • Preheat your oven to 325F and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, combine all the ingredients with the exception of the dried blueberries and mix with a spatula until fully incorporated.
  • Then, fold in the dried blueberries and mix once more.
  • Once the ingredients are well combined, pour granola mixture onto the baking sheet. Using the spatula, spread the granola until it is in a thin layer.
  • Bake the granola in the oven for 25-30 minutes or until the mixture is golden brown and hard to the touch.
  • Allow the granola to cool completely, then break apart with your fingers.
  • Store in the pantry at room temperature for up to two weeks.

Notes

  • Use an all natural runny nut butter for best results. If using a thick nut butter, then you may need to add in a touch of oil like coconut oil, extra virgin olive oil or avocado oil.
  • Spread the oat mixture onto a baking sheet that's lined with parchment paper to prevent it from sticking. Press it into the pan in one large section to create clusters after baking.
