Coffee Chia Seed Pudding

5 from 1 rating
Hannah Kling
Coffee Chia Seed Pudding is a quick and easy snack or breakfast recipe. It’s made with chia seeds, cold brew, almond milk, and a touch of maple syrup for sweetness. This simple recipe comes together fast and makes the perfect afternoon pick-me-up, especially paired with fresh fruit like strawberries.
Prep Time 5 minutes
Cook Time 1 hour
Servings 2 servings

Ingredients

  • 1/3 cup chia seeds
  • 3/4 cup cold brew (or cold coffee)
  • 1/3 cup almond milk
  • 1 tbsp cacao powder
  • 1 tbsp maple syrup

Instructions

  • To start, combine cold brew, almond milk, maple syrup and cacao together and whisk until ingredients are well incorporated.
  • Add in the chia seeds last and mix once more. You want to mix with a whisk rather than a spoon as this allows the chia seeds to really separate.
  • Cover the bowl with a lid or a piece of foil, etc. and place in the fridge for a minimum of 1-2 hours.
  • Remove from the fridge, give it a good stir and enjoy! I like to top mine with fresh strawberries and cacao nibs!
  • Store in the fridge and enjoy within 5 days.
