Prep Time 15 minutes
Cook Time 10 minutes
Servings 8 cookies

Ingredients

  • 1 1/2 cups shredded unsweetened coconut
  • 10 pitted dates
  • 4 Tbsp granola butter
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat oven to 350F. Toast coconut in a thin layer on a baking sheet for 5 minutes, or toast in air fryer.
  • In the meantime, add soft dates to your food processor and blend until smooth. See notes above.
  • Then, add in toasted coconut and granola butter and blend until smooth.
  • Texture should be a soft crust.
  • Using a cookie scoop, scoop cookie batter and roll into balls. Place on a baking sheet lined with parchment paper.
  • Then, using the palm of your hands, press down and form balls into a Samoa cookie shape.
  • Using a chopstick, make a hole in the center of each cookie. Place cookies in fridge to harden.
  • In the mean time, melt your dark chocolate chips. Then dip the bottom of each cookie in the dark chocolate and set back onto the parchment paper.
  • Then, drizzle more chocolate over the top of each cookie. Set back in the fridge to harden.
