Ingredients

Banana Pudding

  • 1 cup cottage cheese (I used low fat Good Culture)
  • 1/2 cup greek yogurt (I used plain Greek God's)
  • 2 tbsp honey (may sub agave, maple syrup, monk fruit sweetener, coconut sugar, or sugar)
  • 1 tsp vanilla extract or vanilla bean paste
  • 3 ripe bananas (sliced)
  • 2 scoops (about 1/2 cup unflavored protein powder, I used Ritual)

Optional additions

  • vanilla wafers (for layering)
  • banana slices (for layering)
  • whipped cream (for topping)
  • mint for a garnish

Instructions

  • In a blender or food processor, add in the cottage cheese, greek yogurt, sliced bananas, honey, protein powder and vanilla extract. Blend until smooth and creamy. Try not to over-blend mixture, which is why adding in sliced vs whole bananas is recommended.
  • Assemble jars with by layering with vanilla wafers, banana pudding, sliced bananas and then finishing off with whipped cream if desired.
  • Serve immediately, or chill for a few hours before enjoying.

Notes

  • Slice bananas into small pieces before adding into the blender or food processor. This will allow them to blend quickly and easily without over-blending the mixture.
  • Over blending will create a more liquid consistency. If your mixture is too runny, you can add in more protein powder to thicken it up, or store in the fridge for a few hours.
  • Be sure to use a protein powder that you enjoy otherwise you can ruin the taste of this pudding. I prefer to use Ritual protein powder.
  • All protein powders aren't created equal, meaning you may need to add more or less into the mixture depending on the consistency. Start with one scoop and add in another if needed. Don't add more than 2 scoops to avoid a strong protein powder flavor.
