Instructions

  • Pit cherries using a cherry pitter, or opt for frozen cherries.
  • Add the pitted cherries to a bowl and toss with lemon juice, both extracts, and set aside.
  • Make the crumble, In a medium bowl, mix together ground cinnamon, slivered almonds, coconut sugar, gluten free flour, and oats.
  • Add in the cubed butter and use your hands to incorporate the butter into the dry ingredients.
  • Divide the tossed cherries into the individual ramekins and evenly top each one with the crumble.
  • Add the ramekins to a baking sheet and bake for 25-30 minutes, or until the tops are golden brown. Serve warm with ice cream if desired.

Notes

  • Use a cherry pitter: I already mentioned this, but it’s so important that it bears repeating! A cherry pitter will save you not only time, but will save you from cleaning up a big mess as well.
  • Adjust the sweetness to your preference: I don't add any sweetener to the cherries since the topping is plenty sweet. However, if you like your desserts extra sweet, then give the cherries a taste and add in coconut sugar if needed.
  • Use a large baking dish instead: If you wanted to skip the individual portions, then you can use a 8x8 baking dish instead.
