These Homemade Kudos Granola Bars are easy to make and taste so similar to the real thing. They are satisfying, sweet, and a great grab and go snack! These were discontinued years ago and were one of my favorite childhood snacks, so let's remake them but with better-for-you ingredients!
Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 3/4 cup crispy quinoa
  • 1/2 cup oats
  • 3 tbsp coconut sugar
  • 2 tbsp dairy free or regular butter
  • 1/3 cup maple syrup
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 1/4 cup dairy free mini chocolate chips (divided)
  • 2 tsp coconut oil
  • 1/4 cup unreal candies

Instructions

  • Line a standard sized loaf with parchment paper. Set aside.
  • In a large bowl, combine the crispy quinoa and oats. Set aside.
  • In a small sauce pan over low heat, stir together the coconut sugar, butter, and maple syrup. Bring to a simmer, and continue to stir for 3-5 minutes, until thickened. Remove from heat.
  • Pour the caramel mixture over the oat mixture, add in the vanilla extract and using a rubber spatula, mix until fully combined.
  • Add in 1/2 cup of the mini chocolate chips, mix gently but be careful not to over-mix, otherwise the chocolate chips will melt.
  • Working quickly, press the mixture into the loaf pan. Sprinkle with 1/4 cup of chocolate chips and unreal candies. Use the edges of the parchment paper and press the toppings into the granola bars.
  • Place in the fridge to set for a minimum of 1 hour.
  • Melt the remaining 1/2 cup of chocolate chips and coconut oil together in the microwave, pausing to stir every 30 seconds until fully melted.
  • Working one at a time, dip the bottoms of each granola bar into the chocolate, then place onto a piece of parchment paper. Once all of the bars have been dipped, drizzle any remaining melted chocolate on top of each bar.
  • Refrigerate for 30 minutes, or until chocolate has fully set and enjoy.

Notes

  • Bars can be stored in an airtight container, in the fridge for up to 10 days, or 1 month in the freezer.
