Ingredients

French Toast

  • 2 cups oat milk (or any other milk alternative)
  • 6 eggs
  • 1/2 cup pure maple syrup
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 16 oz (1 loaf of pumpkin brioche bread, cut into 1” cubes)

Streusel Topping

  • 2/3 cup coconut sugar (may sub cane sugar, brown sugar or monk fruit sweetener)
  • 1/4 tsp sea salt
  • 1/2 cup all purpose flour (or a 1:1 gluten free flour blend)
  • 1/2 cup butter (melted)

Instructions

  • Preheat oven to 475F and prepare a 9x13 inch pan by greasing with butter or non-stick spray.
  • In a large bowl combine oat milk, eggs, maple syrup, vanilla bean paste, cinnamon and pumpkin pie spice. Whisk until ingredients are fully combined and set aside.
  • Next, cut an entire loaf of brioche bread into 1 inch cubes.
  • Add the cubed brioche pieces to the greased pan and pour the milk mixture over the bread. Use a spoon to gently mix, you want to ensure each piece is coated in the mixture.
  • In a small bowl add in the melted butter, flour, coconut sugar and salt. Mix well until a crumble starts to form, then use your hands to crumble the streusel evenly over the french toast bake.
  • Cover the pan with foil or parchment paper and bake for 3o minutes.
  • Let cool for 10 minutes, slice into and enjoy!

Notes

  • Grease a non-stick pan with butter to ensure the french toast bake does not stick.
  • Make sure each bread piece is well coated with the milk mixture.
  • Cover the french toast bake with foil or parchment paper. If using parchment paper, hold down the sides with oven safe clips.
