These Reindeer Cake Pops are the perfect no bake treat to make this holiday season. They come together in just under 30 minutes and are made with simple ingredients like almond flour, peanut butter, and chocolate.
In a bowl, combine peanut butter, maple syrup and vanilla extract. Then, mix in almond flour.
Use a cookie scoop and roll dough into balls. Place on a piece of parchment paper and freeze while you melt the chocolate.
I prefer to melt chocolate in the microwave in 30 second increments with a touch of coconut oil. But you can use a double broiler too.
Working one at a time, dip each ball in melted chocolate and then add on two pretzels for the antlers, two candy eye balls and a red candy for the nose.
Place back on the parchment paper and back into the freezer to harden fully, about 20 minutes and enjoy.
Notes
Fully mix the wet ingredients before mixing in the almond flour.
Use a cookie scoop to create perfect uniform balls.
Place the balls in the freezer while you melt the chocolate to help them firm up.
Melt the chocolate with some coconut oil to help smooth it out.
Chocolate can be melted in the microwave in 30 second increments, stirring well in between each round. Otherwise, you can melt on the stovetop in a double broiler.
