Vegan Banana Bread Cookies

5 from 6 ratings

Vegan Banana Bread Cookies are a great and unique way to use up those ripe bananas on the counter. They taste just like a slice of banana bread but in cookie form, loaded with mini chocolate chips and chopped walnuts. They're fluffy, moist and have all the best parts of your classic banana bread.

Cook Time 12 minutes
Total Time 22 minutes
Servings 12 large cookies

Ingredients

  • 3 large ripe bananas (mashed about 1.5 cups)
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup mini chocolate chips + more for topping
  • 1/3 cup chopped walnuts + more for topping

Instructions

  • Preheat oven t0 350F and prepare a baking sheet by lining it with parchment paper.
  • Add the bananas to a large bowl and use a fork or potato masher to mash down. You want little to no clumps left.
  • Next, add in the coconut sugar, vanilla extract and cinnamon and whisk until well combined.
  • Add in the oat flour, almond flour, baking powder, baking soda and salt. Mix with a spatula until ingredients are combined.
  • Fold in the chocolate chips and walnuts last and mix until fully incorporated.
  • Use a double cookie scoop to add batter to a prepared baking sheet.
  • Use a spoon to form uniform cookies and bake for 12 minutes or until golden brown.
  • Let cool for 5-8 minutes before removing from the baking sheet and enjoy!

Notes

  • Mash bananas down until there are little to no chunks left.
  • You can make your own oat flour by blending oats for 30 seconds.
  • These cookies won't spread in the oven like your traditional cookie so it's important to form and shape them prior to going into the oven.
  • Add on more chocolate chips and walnuts to the tops of each cookie before baking.
  • Let sit on the baking sheet for 5-8 minutes before removing, this will help them set.
