Start by cooking the apples: In a small skillet, heat coconut oil over medium heat. Add diced apples, maple syrup, cinnamon, nutmeg, and a pinch of salt. Cook for 5–7 minutes, stirring occasionally, until apples are softened and caramelized. Let cool slightly.
Prepare the Crumble: In a small bowl, mix oats, almond flour, coconut sugar, melted coconut oil, and cinnamon until crumbly. Spread on a parchment-lined baking sheet and toast in the oven 350°F for 8–10 minutes, or the air fryer for 2-4 minutes. stirring once halfway, until golden and fragrant.
Next, make the Cheesecake Base: Add cottage cheese, Greek yogurt, maple syrup, and vanilla bean paste to a food processor or high-speed blender. Blend until smooth and creamy, 30–45 seconds. Set aside.
Assemble the Jars: In small jars or glasses, layer crumble, apple filling, cheesecake filling, apple mixture, and crumble topping.
Chill & Serve
