Blended Strawberry Overnight Oats is a delicious and unique way to enjoy overnight oats, but with a smooth and creamy texture. This recipe is both vegan and gluten free, comes together in just a few minutes and tastes like having dessert for breakfast.

Ingredients

blended oats

  • 1 cup old fashioned rolled oats
  • 1 cup almond milk (can sub any other milk/ nut milk alternative)
  • 1/2 cup fresh or frozen strawberries
  • 1 tbsp ground flax
  • 1 tbsp cashew or almond butter
  • 1 tsp vanilla extract
  • 1 tsp maple syrup

toppings

  • 1/4 cup non-dairy yogurt
  • 1/4 cup freeze dried strawberries (crushed)

Instructions

  • In a blender, add in all the ingredients except for the yogurt and freeze dried strawberries.
  • Blend for 30-60 seconds until smooth and creamy.
  • Pour blended oats into a bowl. Then, place in the fridge for a minimum of 4 hours, or the freezer for 20 minutes to firm up.
  • Once firm, spread the yogurt on top and top with crushed freeze dried strawberries. ENJOY!!

Notes

  • Blend ingredients on high speed for 30-60 second or until mixture is smooth and creamy. I like to use my Nutribullet or Beast Health Blender since it is a smaller cup and really ensure’s everything is blended together. If you are using a larger blender, you may need to stop to scrape down the sides a few times.
  • If you’re enjoying that day, throw the blended oats in the freezer for 20 minutes or until firm.
