Blueberry Yogurt Bites are the perfect sweet treat to keep stocked in your fridge or freezer. They’re made with just three simple ingredients and come together quickly for an easy, refreshing snack.
Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 13 skewers

Ingredients

  • 2 cups fresh blueberries
  • 1 cup plain greek yogurt (may use dairy free alternative)
  • 1 cup dark chocolate (melted with 1 tbsp coconut oil)

Instructions

  • Push fresh blueberries through the center with a toothpick, I was able to stack on 4 per toothpick, but do as many as you can, depending on the length.
  • Then, coat each skewer in greek yogurt and place them on a baking sheet that is lined with parchment paper and freeze until firm, about 1 hour or longer depending on your freezer. The key is to ensure this layer is completely firm to the touch.
  • Next, melt the chocolate with the coconut oil in 30 second increments. Then, dip and coat each skewer until there is no yogurt showing. Place back on the parchment paper and back into the freezer for 20-30 minutes or until chocolate shell is firm.
  • These can be stored in the fridge or freezer! Enjoy.

Notes

  • Fresh blueberries or just fresh fruit is recommended for this recipe.
  • Make sure the yogurt is totally firm before dipping in the chocolate otherwise it will melt and create a mess.
  • Keep these stored in the fridge for a creamy grab and go treat, otherwise they taste delicious straight out of the freezer too!
  • If you're wanting to keep these stored in the fridge, make sure the magic shell is completely covering the blueberries, otherwise they will melt in the fridge.
