Fresh blueberries are highly recommended for the best taste and texture. Also, frozen blueberries would be hard to push through the toothpick. You can also use any other fresh fruit as well.

The blueberries are dipped and coated in plain greek yogurt, but feel free to use any type of plant based or regular yogurt instead. Flavored yogurts would taste great too!

Lastly, these bites are coated in melted chocolate, you can use milk, dark or white!

How To Make

ONE: Push fresh blueberries through the center of each blueberry and then coat in greek yogurt. Place them on a baking sheet that is lined with parchment paper and freeze until firm.

TWO: Next, dip and coat them in melted chocolate and freeze once more. Enjoy once they are totally firm.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup plain greek yogurt, may use dairy free alternative
  • 1 cup dark chocolate, melted with 1 tbsp coconut oil

13 skewers

Directions

  1. Push fresh blueberries through the center with a toothpick, I was able to stack on 4 per toothpick, but do as many as you can, depending on the length.
  2. Then, coat each skewer in greek yogurt and place them on a baking sheet that is lined with parchment paper and freeze until firm, about 1 hour or longer depending on your freezer. The key is to ensure this layer is completely firm to the touch. 
  3. Next, melt the chocolate with the coconut oil in 30 second increments. Then, dip and coat each skewer until there is no yogurt showing. Place back on the parchment paper and back into the freezer for 20-30 minutes or until chocolate shell is firm.
  4. These can be stored in the fridge or freezer! Enjoy.
