This Chocolate Cottage Cheese Mousse is a rich, creamy no-bake dessert made with cottage cheese, cacao powder, maple syrup, and vanilla. It blends into a silky chocolate treat in minutes and is perfect for meal prep or an easy sweet bite straight from the fridge.

Ingredients  

Chocolate Cottage Cheese Mousse

  • 1 cup cottage cheese (good culture for best texture)
  • 2 tbsp cacao powder (start with 1 and adjust to taste)
  • 2-3 tbsp maple syrup (start with 1 and adjust to taste)
  • 1 Tbsp vanilla bean paste (or 2 tsp vanilla extract)
  • Pinch of salt

Optional Magic Shell

  • 2 Tbsp chocolate chips
  • 1 tsp coconut oil

Instructions

  • Add the cottage cheese, cacao powder, maple syrup, vanilla extract, and pinch of salt to a food processor.
  • Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy.
  • Taste and adjust sweetness if desired by adding additional maple syrup or cacao powder. Transfer the mousse to serving jars or bowls.
  • If making the magic shell, melt the chocolate chips with coconut oil until smooth, then spoon over the mousse. Refrigerate for 30 minutes to chill, thicken slightly, and allow the chocolate shell to set.
  • Top with coconut whipped cream, fresh raspberries, chocolate curls, or any toppings you love, then serve chilled and enjoy.

Notes

  • A food processor works best for creating a thick, smooth mousse texture without thinning it out.
  • Start with 2 tablespoons maple syrup, then add more to taste after blending if you prefer it sweeter.
  • Use vanilla bean paste for a deeper vanilla flavor and those pretty specks throughout the mousse.
  • The magic shell topping is best added once the mousse is portioned into jars or bowls.
